Food Friday : Lasagna Soup and Stuffed Cheese Buns

A double winner! Both will definitely be made again soon!

Lasagna Soup 
from A Farmgirl's Dabbles

    for the soup:
  • 2 tsp. olive oil
  • 1-1/2 lbs. Italian sausage
  • 3 c. chopped onions
  • 4 garlic cloves, minced
  • 2 tsp. dried oregano
  • 1/2 tsp. crushed red pepper flakes
  • 2 T. tomato paste
  • 1 28-oz. can fire roasted diced tomatoes
  • 2 bay leaves
  • 6 c. chicken stock
  • 8 oz. mafalda or fusilli pasta
  • 1/2 c. finely chopped fresh basil leaves
  • salt and freshly ground black pepper, to taste
  • for the cheesy yum:
  • 8 oz. ricotta
  • 1/2 c. grated Parmesan cheese
  • 1/4 tsp. salt
  • pinch of freshly ground pepper
  • additional cheesy yum:
  • 2 c. shredded mozzarella cheese
Preparation
Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.
Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy and absorb all the soup broth. You may even want to consider cooking the noodles separately, and then adding some to individual bowls before ladling the soup over them. This would be an especially smart move if you are anticipating any leftovers. Right before serving, stir in the basil and season to taste with salt and freshly ground black pepper.
While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.
To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese.

Stuffed Cheese Buns

1 cup warm water (probably somewhere between 105º and 115º. I just get it hot from the tap. Don't get it too hot or it will kill the yeast.)
2 tablespoons yeast
2 tablespoons sugar
2 teaspoons garlic powder
1/4 cup melted butter
1/4 cup olive oil
3 cups all-purpose flour
2 teaspoons salt

-At least 8 oz. of cheese, the more the merrier (I used chunks of mozzarella for the inside and a mixture of shredded colby and swiss for the top. I was just trying to use up all the forgotten chunks in the hidden corners of the fridge)
-Parmesan cheese
-A few tablespoons of melted butter mixed with a sprinkle of garlic powder and some fresh herbs if you want. 

Mix together the yeast and water and let it sit for a couple minutes. Add the sugar, garlic powder, melted butter, and oil. Add the flour a little and a time, mixing in your stand mixer with a dough hook. Add the salt. Knead for 10 minutes, in the stand mixer or by hand. Let the dough rise in a greased bowl (I used the same bowl) covered with a wet cloth for about 30 minutes. Preheat the oven to 375º. Divide the dough into about 20 pieces or so (you can make them as big or small as you want). Put about a 3/4 inch chunk of cheese in each one and make sure you pinch all the edges back up tightly. Put the pinched side down on a greased baking sheet. Sprinkle the buns with more shredded cheese and some parmesan cheese. Bake at 375ºF for about 11-15 minutes until the bread is golden brown and the cheese is bubbly. Brush with the melted butter and serve warm.

Wonderful Weekend

We are back from one of the best weekends we've had back in Iowa. We saw TONS of family, the kids spent lots of time with their grandparents, great grandparents and cousins, we saw great friends and I even got a Girls Night! It was a weekend of relaxation filled with great food, no stresses, and  FUN!

Wednesday Wash

This picture is from about a month ago, but I was reminded of it just yesterday as we did it all again! Brooklyn is NOT a fan of the car wash. As soon as we pull into the driveway, she knows what's coming. I've started letting her sit on my lap as the car is pulled through the tunnel and that at least helps calm her. She still covers her eyes the entire way through!

BB Clinic for Walker

It's time for basketball once again, and Walker is more than ready! He had his player's clinic on Saturday, but won't actually start games until January. He is right in his element whenever there's a ball in his hand, no matter the ball!




There's a lot of emphasis on dribbling in this league. This little game of capture the flag dribbling was fun to watch.

Food Friday - Creamy Shrimp and Mushrooms

We love a good creamy pasta dish around here. This cream sauce recipe blew our stand-by OUT OF THE WATER. This will be our go to recipe from how on!


Creamy Shrimp and Mushroom Pasta
from Chaos in the Kitchen
serves 4, prep 5 min, cook time 30 min
  • 4-8 oz fettuccine or linguine
  • 10 tbsp butter, divided (I know, but I’ve tried it with less and it’s just not the same)
  • 8 oz fresh, sliced mushrooms
  • 2 garlic cloves, minced
  • 3 oz cream cheese, cut into small pieces
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped (you can use dried herbs if that’s all you have)
  • 2/3 cup boiling water (from your noodle pot)
  • 1 lb cooked shrimp (feel free to buy frozen-gasp!)
  1. Boil and salt a large pot of water and cook your pasta.  I usually only use about half of an 8 oz box, preferring fewer noodles.
  2. While your pasta is cooking, cook your shrimp if necessary and reserve.  If your shrimp are pre-cooked and frozen, quickly thaw them under running water.
  3. In a large skillet melt 2 tbsp of butter over medium heat and saute mushrooms until soft and brown.  Season with salt and pepper.
  4. Reserve cooked mushrooms and melt remaining butter in the skillet.  Add minced garlic, cream cheese, and herbs.  At this point, I generally feel like something has gone terribly wrong.  The cream cheese doesn’t really melt and starts to look almost curdled, don’t worry about it!  It will all smooth out and be wonderful when we add the water. I promise.
  5. Simmer cream cheese mixture until well blended. Get a scoop of boiling pasta water from your noodle pot and mix it in, stirring quickly to smooth out the sauce.
  6. Keep sauce hot and add shrimp and mushrooms, mix well and simmer (stirring often) until everything is hot and thickened, about 10 minutes-you wont ruin this sauce by accidentally boiling it so don’t worry.
  7. Toss sauce with cooked noodles and serve.

Every night when Matt and I go to bed, I made a stop in Brooklyn's room to clean out her bed. When I lay her down, she usually has one stuffed animal and one book. She never ceases to amaze me!

Rylie is really becoming quite the chef. She isn't afraid to try something new, this day it was applesauce. She did it completely on her own (except for the help of her trusty assistant!) and got to enjoy the rewards of her labor for breakfast the next morning.

Food Friday : Praline Pecan Baked French Toast

I made this last week for Mom and Dad when they came down for Walker's program. It was GREAT! And it reheated very well the next day. I wouldn't change a thing about this recipe, and I'm looking for an excuse to make it again!
 
Paula Deen’s Pecan Praline Baked French Toast
From The Taste Place
  • French Toast
  • 1 loaf French bread (13 to 16 ounces)
  • 8 large eggs
  • 2 cups half-and-half
  • 1 cup milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Dash salt
  • Praline Topping
  • ½ pound (2 sticks) butter
  • 1 cup packed light brown sugar
  • 1 cup chopped pecans
  • 2 tablespoons light corn syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.
Instructions
  1. Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
  2. The next day, preheat oven to 350 degrees F.
  3. Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

St Joseph River Walk

We had the most wonderful weekend, last weekend. Matt was off Saturday until Monday night, so we took full advantage of it. We've been looking for a great place to walk, someplace quiet, out of town. We finally found a river walk that goes along the Missouri River, it's been paved and will be a great place to ride bikes next summer. We only went on one small section of the path and are looking forward to venturing out in a different direction next time.

Pershing Elementary Playground

The kids' elementary has been raising funds for new playground equipment. The first part of it was installed this last week and the kids were super excited to go play this weekend. There are a lot of portions of the new unit that require balance, strength and endurance. It is a great system!

Halloween 2012

It did not take Brooklyn long to figure out that by walking up the the door, they would give her candy. She may have been a few steps behind, but she was not going to be left out!

The kids all did a great job of walking the whole night and never once complained


 After I took the kids around our neighborhood, we met Matt at work and then went to our church's Harvest Party. It was also the kick off for the new location opening this weekend. The location we attend will hold Sunday morning services and this new location will house the Sunday evening services. We're excited to be able to use both!

 We definitely came home with a haul! Our giant stainless steel bowl is overflowing. Walker says we have enough until next Halloween!!
