Foody Friday - Artichoke Chicken

This is a favorite!!  The kids always devour it and want seconds! It tastes like a yummy artichoke dip! YUM! YUM! YUM!!!


Artichoke Chicken

Prep Time: 10 Minutes
Bake: 30 minutes

1 (14-oz) can water packed artichoke hearts, drained and chopped
3/4 cup grated Parmesan cheese
3/4 cup mayonnaise
1/2 tsp garlic powder (or use fresh minced garlic)
4 skinless, boneless chicken breast halves (sliced in half to create 8 thin pieces)

Preheat oven to 375 degrees F.

In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic powder. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.

Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.

Yield: 4 servings

When French Toast Met Pancakes … and Fell in Love

Ingredients

• 4 whole Large Eggs
• 1 cup All-purpose Flour
• 1 cup Milk
• 1 Tablespoon Brown Sugar
• 2 Tablespoons Vegetable Oil
• 1-½ teaspoon Baking Powder
• ¼ teaspoons Salt
• 1 teaspoon Vanilla (optional)
• ½ teaspoons Cinnamon, Optional
• 12 slices Bread (you'll Want Something Thick And Hearty To Stand Up To The Heavier Batter)

Preparation Instructions

Beat eggs until fluffy. Beat in remaining ingredients (except bread). Heat a griddle over medium high heat until a drop of water skitters across the pan. Dip one slice of bread at a time in the batter until it is completely covered. Place on the griddle and cook until brown on one side. Then, flip and brown the other side. You will know the bread is ready to flip in the same way you know pancakes are ready: the edges look dry and bubbles have formed in the batter along the crust. Slather with butter and drizzle on some maple syrup. These also freeze well for breakfast later in the week.

Scooter Fun

The kids have rediscovered their scooters the last couple of weeks. Our sidewalk in front of our house is long without driveways and they can get quite a run at it!

Time for scooter maintenance!

14 Months

UGH!! This was supposed to post yesterday! Oh well!!

Brooklyn is a little spitfire!! She knows what she wants and she thinks she knows how to get it! We're working on "talking nice"!!!

• Brooklyn now walks all of the time, only crawling when it's actually necessary!
• Has mastered climbing down the stairs
• Got her fourth tooth and of course seems to be working on more
• Is enjoying going to Amanda's house, our daycare provider. And has started to go to the church nursery. This last week there were 9 little girls all a one-year-old!! YIKES!!
• Has weaned herself down to one nap a day 90% of the time
• LOVES books. B brings us books all day long and loves to sit and listen and point to the pictures
• Imitates all the funny sounds Matt makes at her. I love watching the awe in her eyes!
• Beginning to use a fork at meals
• Pushes and pulls her toys all over the house
• Like to "help" empty the dishwasher!

Brooklyn LOVES Annabelle!!! She especially loves to feed her the things off of her plate that she doesn't like!

Post Game Wrap Up

This is a pretty typical scene at our house. Walker finishes watching a Cubs game (thank goodness for WGN!) and the first thing he wants to do is call Gramma Tamma or Grandpa to talk to over! And he wants to talk about it all: winning/losing pitcher, player of the game, final score, averages, you name it, he soaks it in!! The boy loves his Cubbies!!!

When Mom was up here one of the last times, she got up with B and fed her breakfast. Only, she let her feed herself!!! This one's for Aunt Andrea!!

Fridge Art

The kiddos got these in the mail this week from our new dentist. It was sad to leave Dr. Anderson, but we know Dr. Mitch and his colleagues and team are going to keep us on the right road to keep their smiles the best they can be!
Rylie has some big things coming up with her dental health, but we know we're in the right hands and they'll do their very best to make it as easy as possible.

More Soccer!!

This was a fun little game!! The kids ran the length of the field and the coaches tried to hit them with the balls!! It was supposedly a "learn to be aware" game, but it sure looked like a "peg the kid that drives you nuts" game!!!

Tired Tuesday

Yep!! We're all a little worn out around here!! Matt's on nights, the kids and I are adjusting to being back in school, and we're all slowly adjusting to the new routine!!

First Day

What's a better way to spend your first day of kindergarten then by celebrating your birthday!! There are lots of September birthdays in Walker's class, so Ms. Terri asked if he wanted to celebrate right away! He was thrilled!!

Party Days

It took us a couple of days to fit in all of Walker's birthday celebration activities. He wanted to go bowling but had soccer the night of his birthday. So, we bumped bowling back to after school on Friday!! Thursday, he got to spend the day with Matt. They went to the bakery for breakfast, got Subway for lunch, played Wii and watched Rio while Brooklyn napped, made tacos for supper and then we all headed to soccer! After soccer was cake time and Skyping!!!

Balloons, Cubs logo, a 6 and a birthday cake!!! Rylie helped me decorate!!
