Food Friday - Million Dollar Spaghetti

I love spaghetti, I could probably eat it almost every day. I've had to resell Matt on spaghetti and have done well. Rylie is not a fan of marinara sauces, even pizza sauce is only tolerable on pizza, never even for dipping. But for some reason, this casserole won everyone over. There's a creamy layer, the meat sauce kind of blends into the background, it's overall a wonderfully easy recipe!

Million Dollar Spaghetti  

Ingredients
1 lb. of Ground Beef
1 can of Spaghetti Sauce
8 oz of Cream Cheese
1/4 cup of Sour Cream
1/2 lb. of Cottage Cheese
Whole Stick of Butter
8 oz. of Noodles
Bag of Sharp Cheddar Cheese

First: Go ahead and put your over on 350! Boil those noodles!! While they are boiling go ahead and mix up the cream cheese, sour cream and cottage cheese!!
Make sure that it is mixed up VERY well!
Then.. go ahead and cook that meat!
 
Make sure its good and brown and drain it!
Then pour your spaghetti sauce over it!
 
Take a few slices of your butter and put them in the bottom of your casserole dish,
Then layer HALF of the noodles in the bottom of the dish!
Pour that nicely mixed up creamy mixture on top of the noodles.
and SPREAAAAAD it all over!
Then add the rest of your noodles and put a few slices of butter on top of those noodles.
Now pour the red sauce and meat on top!
and once again SPREEAAAAD
Now place that awesome casserole in your oven for 30 minutes!
After those 30 minutes take the dish out and pour some cheddar cheese on the top and put it back in the oven for 15 minutes!
Then you're DONE!

Baby's New Ride

Baby B was getting to the point where she was ready for a new car seat! She was still in her infant seat at 19 months and still fit beautifully (she could have gone another 2 inches and 15 lbs)! But it was time to move up in the car seat world and she loves it. When she woke up from her nap that day, she grabbed her book and her blankie and plopped herself in! I'm surprised she even let me install it in the Yukon!

Food Friday - Sweet and Sour Crockpot Ribs

YUM!!!
Enough said!!

Sweet and Sour Crockpot Ribs
 
This recipe has so much rich flavor. You can make extra batches of the barbecue sauce and store it in the freezer.

Prep Time: 25 minutes

Cook Time: 11 hours

Total Time: 11 hours, 25 minutes

Ingredients:

  • 1 cup brown sugar
  • 1/4 cup flour
  • 1/3 cup water
  • 1/2 cup vinegar
  • 2 Tbsp. soy sauce
  • 1/4 cup ketchup
  • 1 tsp. minced garlic
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 3 lbs. meaty pork spareribs, cut in 2-3 rib sections (We ended up using country style pork ribs)

Preparation:

Mix brown sugar and flour in a saucepan. Add water, then vinegar, soy sauce, ketchup, and garlic powder. Cook and stir over medium heat until boiling and thickened. Layer ribs in 4-6 quart crockpot, spooning sauce over each layer. Cover and cook on Low for 10-12 hours or on High for 5-6 hours until ribs are very tender. 8-10 servings

Food Friday - Roasted Garlic Chicken Pizza

We can't wait to try this one again! I just bought our household standard thin and crispy crust from the grocery store! The kids made themselves an all meat pizza and then ate ours!

Roasted Garlic Chicken Pizza Recipe

Ingredients:
  • 1-2 whole heads of garlic, roasted
  • 1 pizza crust, homemade or store-bought
  • 1/2 cup PHILADELPHIA brand Italian Herb & Cheese Cooking Creme
  • 2-3 cups shredded cooked chicken
  • sliced white or red onions
  • 1-2 cups shredded Monterrey Jack or Mozzarella cheese
  • 1 handful Italian parsley, finely-chopped
Method:
Begin by roasting your head(s) of garlic.  Once it is ready and cooled to room temperature, carefully squeeze the garlic cloves out of the skin and set aside.
Preheat your oven to 425 degrees (or the temperature specified on your pizza crust, if storebought).
Lay your pizza crust on a floured work surface.  Spread the top with the PHILADELPHIA brand Cooking Creme, leaving a 1-inch border for crust.  Sprinkle evenly with shredded chicken, onions, roasted garlic cloves, and about half of the chopped parsley.  Top evenly with cheese.
Transfer to a pizza baking sheet and bake at 425F degrees for 12-16 minutes, or until the cheese is melted and the crust is golden brown.  (Or you can bake it on a pizza stone, following the manufacturer’s instructions if you’d like.)  Remove pizza and let cool for 5 minutes before slicing.  Garnish with the remaining chopped parsley, and serve.

Now or Never

We have had very little opportunity to sled this winter. Until two weeks ago, we didn't have any snow on the hills. And now, it's all gone again. WE ARE OK WITH THIS!!! You will not hear us complain about a lack of snow. So before I start posting pictures of our deck furniture all set out, the trampoline assembled again and the kids playing in short sleeves, I better show you our one and only day we got to go sledding as a family.

Food Friday - Crescent Pepperoni Roll-Ups

Super Yummy, Super Easy, and we almost always have all the ingredients in the house, the perfect combination.

Crescent Pepperoni Roll-Ups

1 can refrigerated crescent rolls
40 slices pepperoni
4 pieces of mozzarella string cheese, cut in half
garlic powder
pizza sauce

Preheat oven to 375.

Unroll crescent rolls and separate into 8 triangles.  Place 5 slices of turkey pepperoni on each crescent roll.  Top pepperoni with string cheese half and roll up.  Sprinkle crescent rolls with garlic powder.  Place rolls on baking sheet and bake for 12-15 minutes, or until golden brown.  Serve with a side of warm pizza sauce.

Fantabulous!!

Mom and Dad just left our house after coming up on Monday, and we could not have asked for a better visit! It was the perfect week to lead up to what's sure to be a great weekend!
Monday:
  • I got to go ice skating for the first time ever with my kindergarten class. I did quite well, only falling once. My legs were sore the next day, I do think it would be some great exercise!
  • Matt and I went to Walker's spring parent/teacher conference and heard all about what an awesome kid he is! A real "honey" and a great friend to all. Polite, respectful, helpful, self-conscious, ready to learn and very ready for 1st grade.
  • Then we loaded up the Yukon, drove up to Little Pine Lake and enjoyed what was probably the best Zorbaz meal I have ever eaten. It tasted so wonderful, the perfect way to kick off a blizzard!
Tuesday:
  • Rylie and I had to go to school, but at Morning Son we were celebrating Dr. Seuss' birthday. It was definitely a fun filled day.
  • Rylie and Walker went to the dentist in the afternoon, both leaving with a clean inspection and no cavities!
  • Since the storm hadn't moved in yet, we went up to Don Pablo's Mexican. Again, an amazing meal!
  •  And we finished out our evening with a couple of games of bowling!
Wednesday:
  • SNOW DAY!! And the weather was done and had passed us by mid morning. The day was sunny and calm spent with lots of cuddle time for the kiddos with Grandpa and Grandma! 
  • We read books, made Great Grandma Perry's cherry turnovers, had my dad's Chicken and Biscuits for supper, enjoyed the sunshine and having an extra day at home with Mom and Dad. It was perfect timing.
  • I got to open an early birthday present from Matt, a Kindle Fire!!!!! I am LOVING it! And got my first birthday card in the mail from Matt's folks.
Thursday:
  • So far today we got up and went to the Viking for their wonderful breakfast.
  • Spent some time just hanging out with Mom and Dad before they had to leave about 11.
  • The kids and Mom finished decorating my birthday cake! CANNOT wait to dig into it tomorrow, it's beautiful!
  • B took a 3 1/2 hour nap, so I got to sleep about an hour and a half myself. 

Now I think the kids and I are going to go play in the new snow. Then Matt and I are heading to Rylie's conference. And then Matt will have to head back to work for his last night this week! I get him home all weekend. No big plans right now, but I already know by the sounds of the menu and the pile of gifts, I'm going to be spoiled!
