My my laptop charger has died, so until a new one comes, there won't be any new picture posts. :( I hope it's soon! We've been doing some fun things!

Fancy Nancy Mother's Day Tea

Our public library held a Mother's Day Tea last Saturday. The girls and I had a great time! We had treats, made crafts, practiced our banana walk and listened to stories! A great way to kick off the weekend!

Last of the Year

Rylie's Junior Choir had their last performance of the year. The song they sang has parts and the kids were each assigned a part to learn. Last minute, Rylie was asked to sing the part that she had not been singing all along. And then for the second service, she had to switch back again. I love to hear that she is versatile and flexible and that her director know she can count on Rylie to be able to handle the change. We are so proud of our baby girl!

Busy Mama

We got to watch a mama robin build her nest on the motion light of our garage. She worked so hard for two days, was super protective of her hard work and then, unfortunately, she disappeared. The nest got all built and then she never came back. What a bummer!

Wonder Woman

My mom can work wonders! She took an outfit that B received as a gift when she was born, and made it so she can continue to wear it for another summer! Love outfits like that!

Food Friday: Low Fat Pineapple Cake

I am a HUGE pineapple lover. I am willing to try anything with pineapple and especially love it raw! I ran across this recipe on Pinterest and knew I had to try it. So glad I did!!! So simple, so light and very refreshing! I think the picture showed it with whipped cream on top, but I decided to go a little tropical. I whipped up some coconut milk with a little powdered sugar and made coconut whipped cream. VERY yummy!! It was a definite hit at our house!

Low Fat Pineapple Cake

1 box angel food cake mix

1 {15 1/2 oz}. can crushed pineapple with juice

Mix together and pour into a 9x13 ungreased glass pan. Bake at 350 for 25-30 minutes.

 

 

Whipped Coconut Milk Cream

Step 1: Buy a can of full fat coconut milk.
Step 2: Place it in the fridge overnight.
Step 3: Open the can without shaking it or turning upside down.
Step 4: Carefully spoon out the top layer of opaque white stuff that has gathered at the top of the can. Spoon into a mixing bowl. You will be left with about 1/2 cup of white syrup-y looking translucent liquid. Leave this in the can. Note: I use this leftover liquid in numerous coconut-y recipes. Plus, it makes a great coconut syrup - almost like a hydrated extract of coconut flavor.
Step 5: Add 2-3 Tbsp of powdered confectioners sugar to the white stuff. Optional: add cinnamon, vanilla bean - any small amount of flavor you'd like.
Step 6: Grab a hand beater (simple mixers work just as well as expensive ones)
Step 7: Whip the coconut milk froth until creamy. Start on low and move to a higher speed, move the beater in an up and down motion to infuse the mixture with as much air as possible.
Step 8: Serve! You can spoon on top of ice cream, for cream pies, into coffee latte mugs, or eat with a spoon - I guarantee you'll be licking those beaters. And the bowl.

New Tradition?

Late morning on Easter day, we loaded up the kids and headed to an undisclosed location! We drove and met at a halfway point with Mom, Dad, Andrea, Darin and kiddos! We spent the rest of the day and Monday morning just being a family and watching cousins pick up right where they left up three months earlier. I love that they all have such a great friendship! And we got to spend time with people that love us the most! Lots of pictures today!

Yes, Brooklyn did swim. But I took pictures on day two and she was worn out by then!

Then we hit up Cabela's before we left town. We typically just drive on past so it was fun for the kids to see what that place is like inside!
