Just for Kicks

The much anticipated spring soccer season began for the boys today at UMASS Dartmouth, and the boys were definitely up for it.  This year the U8 got the early time slot (8:00) followed by the U6 division at 9:15.  Skip, who last year was kinda timid about it, was a much more aggressive, and when scrimmage time came around he scored the first 2 goals for his team, and added one more before the game ended.  Harry, who has never been timid about it, listened really well during the skill drills, and then scored four goals, during his game.  That's the good news.

The bad news was the fact it never got above 40 degrees the entire time, and the wind up at the fields was absolutely brutal. It took more than an hour for me to warm up once we got home. But, overall, it was a good day; the boys had lots of fun, learned some new skills, got lots of exercise, and, will definitely sleep well tonite!

School days

People often ask me WHY I choose to homeschool the boys, and depending on the day, my answers vary slightly. Some days it's VERY frustrating, some days it's beyond rewarding, and some days, it just is. I do love  seeing  them learning new things, and the moments when a new concept just clicks, it's a joy to see their little faces. Somedays I could pull my hair out when one (or on the rare occassion both) boy just does not put any effort into the work. I love the flexibility it affords us, allowing us to fit various appointments into our days when needed. On days like today, when we get long overdue warm weather, I love being able to let them play on the trampoline and extend break time from the normal 15 minutes to 30, 40 even 60 minutes.  As you can see, THEY think it's pretty cool too:

Most of all though I love being able to give them a Christian education.  So, even with the hectic days and the stressful days, it's all worth it.

Yummy Recipe!

I found the most yummy recipe for Cabbage Lasagna over on Nicolle's blog and couldn't wait to try it.  I finally had all the ingredients I needed today, so,  viola!

When Nicolle made it, she made some small changes to the recipe to fit her family's tastes, and I too tweaked it just a little bit.

My recipe is a follows:

Brown a lb of ground turkey, and drain the excess fat.  Add one jar of your favorite pasta sauce, some black pepper, Italian seasoning & basil. Stir together and put aside. Meanwhile chop one medium head of cabbage into thin wedges and place them all in a 13x9 baking dish that has been sprayed with Pam.  Pour meat & sauce mixture on top and smooth out the sauce so all the cabbage is covered (to keep it from getting crispy). Cover with two cups of Fat Free Mozzarella. Bake uncovered at 325 degrees for 45 minutes and then sprinkle with some grated Parmesan.

Although they were all skeptical, EVERYONE in the house loved it, and everyone except Skip (who has a cold, again, and hasn't been eating much anyway) had seconds.   I don't think anyone missed the pasta noodles, and without them, there's alot less calories.

As Mikey says, try it, you'll like it!

So, it's like this...

I've come up with a list of the top ten things I would rather do, than, what I have to do tomorrow:

1. Have quardruplets via natural childbirth.
2. Watch cartoons for 24 hours straight
3. Eat snails
4. Have needles stuck in my eyes
5. Be forced to watch a Sean Connery movie marathon.
6. Crawl into a snake pit
7. Have spiders all over me
8.Give up Hot Tamales for the rest of my life
9. Have my nails pulled out. Slowly. One by one.
10. Wear socks every day.

Yup, gimme any or all of the above, but please, PLEASE don't send me to the Oral Surgeon.  Darn! Too late, I've already been sent. This isn't gonna be pretty - I can tell you THAT much. <>

Somebody say CHOCOLATE?

After morning services today we met with the Medeiros family (well minus Luis) and visited Dorothy Cox Candies for their Spring Open House.

We got to tour the facility:

Got to see how they made LOTS of candies & treats:
Sampled WAY TOO MANY yummy things:

Ran into a strange person in a bunny suit:

Got to pick out one treat from the Retail Store:

And of course, I got to spend some time with my bff, Lily:
Even though we ate way too much, everyone still had room for Sunday Dinner when we got back home.

Of course the boys are now out back, jumping off all the junk they ate, on the trampoline, while I'm indoors doing nothing except typing. Guess this means I'd better join them outside before we get ready for evening services...
