Every once in awhile

I come across a really good recipe that I can't help but share. Today it's Stuffing Topped pork chops. I tried them for the first time yesterday, and everyone raved! Skip, who's not  a big stuffing eater, even ate every bite. They're pretty simple to make too:


4 - 6 Pork Chops

6 slices of dried bread, diced into cubes

1 cup apple, finely chopped

1/4 cup chopped onion

1/2 cup chopped celery, finely chopped

tsp. salt

1/4 tsp. pepper

cup of chicken broth

Olive Oil

Soak dried bread in chicken broth, then squeeze out all excess liquid. Mix well with apple, onion, celery & spices to make stuffing. Set aside. Brown one side of chops in large frying pan in 2 tablespoons olive oil, turn over, and distribute stuffing evenly over the 4 chops, cover, and turn cook on low heat for approx. 45 minutes. Serve and enjoy!

Sick ward...

I think - no I KNOW that this has been the worst winter for us, health wise. We've had more colds, flus, bugs & infections this past winter than we've had for the past 9 combined.  Truly!  Not only that - Mike, who almost never gets sick, has had pneumonia twice. He just returned from a conference in FL Thursday nite, and said he had a cold. By last nite he was pretty miserable, and during the nite, his breathing was labored. He took himself to the Dr. this morning and sure enough, severe upper respiratory infection and a touch of pneumonia. He's been zonked out on the recliner and/or bed all day, so the boys and I have just sorta tried to keep the noise down to a dull roar, and let him rest. He did wake up for dinner and have some meatloaf, but right afterwards he headed right back to bed. Oi!  I'm sure hopin' he's better soon - it's tough keepin' two rambunctious boys quiet!

Making up for lost time...

Skip was late getting his baby teeth (first one at almost 11 months) and so we expected him to be later losing them, and we were right on target.  He lost his first two teeth less than a month before his 7th birthday, and then nothing until he after he turned 8 in January!  But, he's making up for lost time and has now lost three teeth in less than 2 weeks!  He's thrilled of course but we told him if he looses anymore anytime soon, we're gonna start calling him Jack...as in O'Lantern :)

Tampa/St. Pete Beach highlights

Well all good things must come to an end, and by tomorrow at this time our vacation will be over we'll be on our way home! (Of course I must add that we were supposed be on our way home right now, but due to the storm back home, our trip got extended another day!)

We've had such a nice time here in Florida. What started as a quick trip down for Mike to meet with an attorney regarding a new client, turned into an inexpensive family vacation at my favortie hotel ever - The Don Cesar. We hadn't been here in four years, and while it's the same old wonderful place, it seems they've added some really nice touches. Things like CONSTANT activities for the kids: diving for tokens in the pool, limbo contests, musical chairs, cannonball contests, bingo, and so much more. The kids have had a great time, and Mike and I (after the first two full days of work for Mike) were able to spend some quality time together.  They boys spent a good deal of the time here playing with some new friends, Gwendolyn & Hudson, and hope to become pen pals. Skip gave Gwen his address so she can write to him, and then Skip promised her he'd write back! So cute!
The weather here was SO nice - and even better than original forecasts. God was so good to us, giving us such great weather.  The locals say the last 6 days have been the best stretch of days since last fall!
