Snow Dogs

Happy Birthday to Paige


27 years ago, when I was just 27...I gave birth to this beautiful baby girl!! She is such a joy to me and I love her so much. She is a kind, caring person, who more often than not thinks of others before herself. Today was a perfect example of that, when asked what kind of cake she preferred, she said chocolate, thinking that would be easier, when what she really would have liked was something like ginger pumpkin spice. (Some of my close friends might now be wondering...her mom is making a cake??...no way!! Not to worry, one of her mom's BFF's made her cake, thanks Nat) Paige is a beautiful, smart, talented, kind, polite, creative, happy, silly, spiritual, crazy, gorgeous girl and I love her so much.

Be More Healthy

Well I am really trying to be more healthy. Though I can't (or don't) run and exercise like some of my friends, I am very active. I probably walk a couple of miles every day at work and I am trying to eat better. So you can only imagine my excitement when I found this new product..it is "natural" and I have so much more energy after consuming this "natural" product. I challenge all of my friends to be healthy and take care of yourselves.

Happy Fourth of July


We had a great time celebrating the Fourth of July...it was the most fun trying to take pictures of fireworks. I really should have taken a picture of Paige and I, finally situated after maybe backing over a curb or two...our tri-pods, blankets, pepsi, lawn chair, jackets, instruction books (cause we don't know how to use our equipment) flashlight (to read the books) swatting mosquitoes and saying what is an ISO setting and where do you change the F/stop...but let me tell you, we look good in the back of the Escalade! Kind of the regal redneck look. Yehaw!

Spring Break and the Blustery Day


We are having a great time on our Spring Vacation. Just ran into a little trouble with the wind...it is amazingly blustery here in the desert, but the mechanic at the Cadillac dealer assures me the car doors will stay on until we can get home and get them repaired and my Allstate Insurance agent says he can help with that expense. As to P's hair..we are not sure that is repairable.

I love to Scrapbook Digitally. It seems I learn something new every time I scrapbook. When I paper scrapped, I would often use a layout idea from a magazine or one of my various sources. These sketches or page maps were very handy to use and reuse. So recently I have been trying to create some of my own templates. Although it is not perfect and probably won't win any design awards, I offer it to you to use. Today is my birthday, so this is my gift to you. Where oh Where did my Little Doggies go??

The puppies are doing good with the "potty training" I let them out and they are happy to go, 'cept sometimes they don't come back real fast like and I can't seem to find them. They're kinda small and my yard is kinda big, but it is fenced, so it didn't make much sense to me. Yesterday it was a little warmer, so thought I'd watch them for a minute with my high tech security web cam...well I'll be, there they go...


I can fix that...and I'm not as redneck as you thought 'cause it didn't even require "duck tape."

Resolutions

One of my good friends announced in a public church meeting that his New Year's Resolution for the family was to eat "more greens". I have thought on this and realized that we should all eat more healthy and then today while reading one of my favorite advice columns SHE SAID we need to eat "more greens." Is someone trying to tell me something...WOW what a coincidence. Well for the benefit of the K----- Family, (since they are currently trying to teach J---- that green skittles don't count....I quote the flylady and give her description of greens and even a recipe that I hope to watch the K----- boys (and their DAD)eat for Sunday Dinner next week...........(but not me, cause my resolution is to drink more PEPSI)

If you don't live in the South, you might not know what greens are—
collards, turnip greens, kale, mustard greens, creasy greens. If all
of this sounds like Greek to you, listen up. There's a fully
nutritious, taste treat waiting for you in the produce section of your
grocery store!

Some foods just happen to be more nutritionally dense than other
foods—greens are such a food. Take Iceberg lettuce for
example—please. This stuff is essentially water and not much more
nutritionally speaking. There are much better options.

The key is the color. Dark, green leafy stuff always packs more of a
nutritional punch than the wimpy, light green stuff.

And a perfect example of that is Greens, capital G. These
nutrient-dense, leafy friends are packed with A and C vitamins and
also supply a good amount of (surprise!) calcium to the body. And one
of the best things about these veggies is they're cheap—maybe 39 cents
a pound (or so—depending where you live). If you're itching to
garden, growing any of these greens is easy and rewarding—they grow
like weeds! The bonus with the turnip greens is the turnip on the end
of the green. Turnips are delicious in a variety of ways: soups,
stews and even sliced thin in salads!

So go to the produce section of your favorite grocery store and start
perusing the stuff caterers and restaurants more often than not use
for garnish. Pick up some kale and give it a try. You'll love it!

Here is a very simple, introductory recipe for beginning greens
eaters—enjoy!

Braised Great Garlicky Greens
Servings about 4

1 bunch collard greens -- deribbed, chopped
turnip greens
creasy greens
kale
1-2 tablespoons olive oil
1-2 cloves garlic, pressed or chopped fine
Salt and pepper to taste

Wash well, derib the big ones like collards and kale. In a skillet,
heat the olive oil over a medium high heat and sautÃĐ the garlic till
tender, but don't let it brown. Add the greens and keep stirring till
they are nice and bright green. Now add about an inch of water to the
bottom of the skillet, cover, and simmer till tender. It may take
awhile on the collards, the others watch and add a little more water
if necessary. Stick a fork in to test for tenderness. Salt and
pepper to taste, then serve with rice wine vinegar on the side (that's
how I love `em!). Completely delicious and highly nutritious.
