    🧂 Ingredients

    Makes enough for 2 people × 3 meals
    • 1 bell pepper

    • 1 tbsp olive oil

    • 1 tbsp vinegar

    • 1/2 tsp sugar

    • A pinch of salt

    I used a little less sugar than the original recipe — just a small tweak to suit our taste.

    1.Cut the bell pepper into bite-sized pieces. Put them in a microwave-safe container, cover with plastic wrap or a lid, and microwave at 600W for 1 minute and 30 seconds.

    2.In a separate container, mix the olive oil, vinegar, salt, and sugar.

    3.Add the microwaved bell peppers to the marinade, toss well, and chill in the fridge. And that’s it — ready to enjoy!
