Cupcakes!


How comforting it is to bake, and these tastes wonderful, especially the next day. They do require some effort and time in the kitchen, but they are worth it!!
The reciepe: Devil's Food Cupcakes and frosting: Chocloate Ganache Frosting.
Strawberry Cupcakes (I replaced strawberries with raspberry) was also a success!

Wildberry Crumble

I have knitted another pot holder, see earlier description. This time I used Liliy Sugar'n Cream Cotton, Color 02533 Field of Dreams. Now I am out of yarn:-(

I love this desert! It is a Wildberry Crumble with blueberries and raspberries. Check out the norwegian receipe.

Chocolate Chip Cookies


















My dear hubbie made chocolate chip cookies today, soft and gooey. To be enjoyed with a glass of cold milk - or a caffe latte! The receipe is from Nestle's great pages; Very Best Baking.

Receipe for Waffels with no sugar



3/8 sticks of butter
2 eggs
3 1/2 cups milk
3 cups flour
2 pinches of salt
2 pinches of cardamom
I use different kinds of milk, depending of what I have available in the refrigirator.Melt an cool the butter. Mix eggs in a bowl. Add half the milk and all the butter and salt. Shift in the dry ingredients. Mix until a smooth batter. Add the rest of the milk gradually.Bake in a waffel iron until golden brown. Makes about 12 rounds.

I think these vaffels are very good. I serve with blueberry jam, maple syrup or fresh fruit. Today I sliced up fresh pinapple, very good!
The receipe is based on the receipt that came with my Åviken Waffel iron, with some personal adjustment.

Here is the receipe in norwegain:
50 g smør/margarin
2 egg
7 dl melk
6 dl hvetemel
2 krm salt
1/2 ts kardemomme

Jeg bruker forskjellige typer melk, avhengig av hva jeg har av rester i kjøleskapet.
Smelt smørt og avkjøl. Visp egg i en bolle. Tilsett halvparten av melken, allt smør og salt. Sikt i det tørre. Visp til røren er glatt. Spe i resten av melken. Stekes i vaffeljern til de er gyldenbrune. Oppskrifte gir ca 12 vaffelplater.

Fall feeling with Minestrone Soup

The last couple of days I have had a feeling that fall is early this year. It has been cold at night, yesterday had heavy rain and today very windy.


Today I have given all my potted plants an xtreme makeover. Feels good to get that done!


I also made some comfort food for dinner, a home-made minestrone soup served with bread, cheese and pesto. I love this quick and easy soup:


Minestrone Soup:
Fry 300 grams of minced meat in a large kettle. Add approx. 1 liter of meat broth and a can of chopped tomatoes. Add 4 sliced poatatoes, 2 sliced carrots, 1 sliced leek, 1 chopped onion and a cup of uncooked pasta. Let the soup simmer until the vegetables are tender. Add 1 can of red or white beans, 1 small can of sweet corn and half a chopped squash or cucumber. Add salt and pepper to taste. Enjoy!
