At a breakfast buffet this past weekend, I accidentally wound up combining the two in a chocolate-in-my-peanut-butter incident; the combination was unexpectedly glorious. Not a recipe so much as a suggestion: a peanut-butter-and-blueberry sandwich could be a potential quick breakfast or school lunchbox item.

Almond Coconut Pastry Braid

I'm a little braid-crazy right now. I can't help it; this dough is the BEST EVER to work with. No chilling needed and it rolls out beautifully with minimal flour and minimal effort. If you're afraid of working with dough, THIS is the perfect beginner recipe for you! And look how pretty it is!

I stuffed this braid with a butter-almond-coconut concoction that is absolutely delicious. Enjoy!

No Cook No Chill Recipes

It's getting to be summer, which means it's getting to the point that I REALLY don't want to cook.
My husband & I live in a van, & currently our fridge doesn't work, so it's hard to buy food for more than a day in advance (unless it's not something that needs to be kept cool, obviously)

I'm looking for recipes that don't need to be cooked, & also don't need the ingredients kept in the fridge.

Here's one that we've found, & we both enjoy it a lot :)

Raw Breakfast Bowl

1 shredded apple
1 Tbs chia seeds
1 Tbs shredded coconut
1 Tbs raisins
1 Tbs almonds
1 dash cinnamon
1/3 cup milk


1. Shred your apple using a hand shredder.

2. Place shredded apple in bowl, and top with remaining ingredients.

3. Stir vigourously. Within a couple of minutes the chia seeds and shredded coconut will absorb the liqid and you will have a delicious, ready to eat raw breakfast cereal.

Servings: 1

(If we don't have milk on hand I just use coconut milk powder & water & it works just as well :D)

Buttery Almond Stuffed Morning Buns

These buns are definitely a special occasion treat. They’re the best yeast rolls, soaked with butter (using my favorite Plugrá Butter), stuffed with an indulgent almond mixture, and drizzled with a sweet almond glaze. Basically, they’re insane. If you’re an almond croissant fan like me, you’ve gotta try them!

Chestnut recipes?

I've been digging through Pinterest and not coming up with a lot of ideas to use the chestnuts I have in the pantry. Anyone have any ideas besides chestnut stuffing (which LOOKS good - but not something I make a lot) and candied chestnuts?

I've never had real chestnuts before so I would like something that really highlights the flavor of them.

Oatmeal cookies

What could be better than oatmeal cookies? Only oatmeal cookies cooked at home. I am preparing for my little boy, who knows a lot about good baking . I improvised a little and decorated biscuits with chocolate smiles . My son liked it, and I was so happy. It is useful, tasty and quickly - a great option for a young mother!

Baklava

On Saturday, we were visited by relatives. Was my mother, my aunt, niece and sister of my husband. I , as a real housewife fed the whole family, but not only I... Sister of my husband - unsurpassed confectioner, therefore , surprising us with delicious pastries and desserts. And I begged one recipe for you . It is Baklava!!!!!!! It was delicious and easy to prepare. I share it with you my dear ^)

Crustless almond melon tarts


These almond tarts hardly take over half an hour to make because they are crustless. I suddenly found that this way I like them way more that the classic version in short pastry shells. You can use more traditional apples, pears or cherries instead of melon. I never thought about using melon here before a month ago. Turned out that it does a great job here, everybody seems to love the dessert, but I'll better tell you the whole story.

Turkish baked halva (sicak helva)


Before I came to Istanbul I heard about sicak helva - a kind of custard made of crushed tahini halva mixed with cream and baked. The dessert is traditionally eaten after a fish main as it removes fish aftertaste completely. The idea really resonated with me, so the evening we did visit a fish restaurant I was more concerned about my dessert than about my fish main. I ended up loving it and cooking it at home. It turned out to be very practical in Moscow, as tahini halva is very common around here.

I love scones because they're so quick and easy, but are absolutely divine in terms of texture and flavor. These scones are very lightly sweet, and the glaze adds a much needed dimension, along with a sprinkle of crunchy sugar. Serve with clotted cream and raspberry jam while hot out of the oven. This recipe also provides instructions for freezing the scones for amazing, speedy weekday breakfasts.

If you love pull-apart bread, you're gonna fliiiip. This yeast dough recipe is (I firmly believe) the best tasting yeast bread recipe in existence. My family uses it for everything. And this filling (buttery coconut almond goodness) is the best filling in existence. Combine them in a tender loaf that ends up with the texture of cinnamon-roll-insides and douse them in a heavy coconut cream glaze and, well. Let's just say you'll need to keep coming back to this recipe!

By the way, I could drink this glaze by itself. Don't skip it.

“What’s a long way?” asked Pooh, who had been poking his nose into a jar of honey to see if there was anything left in it. He recalled that there had been, or at least there had been last Monday, before lunchtime, because his stomach had had that funny feeling in it that meant it was time for a small smackerel, and he had poked his head into the jar just like he was doing now to see if there was any honey, and there had been, then.

“Why, all the way, I suppose,” I said.

Pooh’s nose disappeared again into the pot as he considered this for a moment. “And are we there yet?” he said at last. “To All the Way?”

“Possibly. But then again, just as possibly not.”

“It’s awfull dark f we are,” said Pooh, who was exploring The-Place-That-Could-Be-All-the-Way very thoroughly. If you wanted to do it, you could do it, too. All you’d have to do is this, like Pooh:

Schnecken (German sticky cinnamon buns)

I remember saying something about baklava just recently. Forget. These sticky cinnamon buns are the most powerful piece of anti stress baking (and eating) I ever tried. They might well be the best piece of pastry I ever produced. You will smell the nuts bubbling in sticky maple syrup and all the sweet cinnamon richness, while watching how the spiral buns puff out of their cases, catching each others' sides and crisping up on top. Twenty minutes later that one of them looking right at you will be just yours. And so will be the maple nutty goo left over at the bottom of the baking dish (which is, as often happens in life, the best part of the exercise).

I know I've posted some photos for these magnificent cookies (known in my household as "Christmas 'Crack'-ers") before, but I've made it so many times this season to meet growing demands that I thought it'd be worth posting pictures from my most recent encounter with them.

Roast duck with quince


My body just knows that winter is around the corner and it won't let the calendar fool it. After around two years when I didn't want any meat or fish at all, I came to eating almost just those. And given the cold, the greasier they are the more I want them. So I've been in serious relationship with salmon and duck during the last two months. I kept roasting duck for Christmas for many years and it looks like this year it will also happen. There is something extremely family uniting in sharing one good bird for a Christmas dinner. And nothing goes better with it for me than sweet spices and sour fruit.

If you love Magic Bars, you'll love this pastry braid. This tender, almond-scented pastry envelopes melty chocolate, pecans, and coconut bound together with sweetened condensed milk. It’s pretty, but don’t be fooled: this pastry braid is super easy to prepare. It ends up looking like a lot more work than it actually is (those are the best sort of recipes) :)

Baklava


It seems that I found something strong enough to heal a broken heart, which is almost magic. I only made baklava a couple of times and I'm not going to pretend I know everything about it. There are people who learn to make baklava throughout their lives and hopefully I'll once have good talk with one of them. But right now I can say for sure that you can make it very well from the very first attempt and enjoy both the making and the eating just extremely.

Carrot halwa


Carrot halwa was the first Indian dessert I got to try. Since then I tried many more, but it remained my favorite (not sure whether it is a coincidence). It is something comforting, warm and sweet. Something rich and mild. Something I'd never expect from the carrot. Like in English carrot cake it works in some magical way here.

This post has been due for at least two years now. When I just came to Fontainebleau I immediately fell in love with salade aux chèvre chaud (literally salad with hot goat's cheese) and it stayed my absolute favorite throughout the months of my residence. Though very simple to make it is incredibly rich in flavor and texture. Just imagine savory hot and melting goat's cheese with sweet fig jam, crispy toast and walnut over crunchy chilled salad leaves dressed with honey and French mustard.

Gooey “German” Pumpkin Skillet Cake

Y'all. This cake is INSANE. And it's easy. And you just have, have, have to make it. It’s a moist, simple pumpkin skillet cake with a layer of gooey, rich toasted pecan and coconut filling ladled over top. Mike and I ate it with ice cream (duh) and a totally excessive drizzle of caramel sauce, swooning with every bite. You’re going to LOVE it.

Muesli!

I'm on a healthy kick at the moment, or I'm trying to be. As a student, and a lazy one at that, I have picked up a myriad of bad habits in the past few years, and I am trying to cut them out. I'm limiting myself to one takeaway a week, and trying to eat a lot more fresh food than I have been. In an effort to stick with this plan I decided to make up a big batch of muesli. I only cook for myself most of the time so this is the perfect amount to last me for quite a number of breakfasts.

I mixed together approx:
3 cups Rolled Oats
4 crushed up weetbix
1 1/2 cups mixed nuts and seeds - I used about 3/4 a cup of flaked almonds (YUM!!) and the rest was sunflower seeds and pumpkin seeds.
1 cup dried fruit - This amount can be cut down if you want less. I used a mixture of dates, apricots, sultanas and raisins.
Half a teaspoon of powdered ginger
1 teaspoon of cinnamon.

I just mixed everything together really well and chucked it into a massive jar, it looks so pretty and I bet it will taste fantastic!
I currently have a cup of it in the fridge with a grated apple and enough milk to cover. Hopefully that will be a good breakfast for the next couple of days. I'm looking forward to seeing the results!

I already wrote about Caprese salad, but since Sergey started bringing the proper mozzarella to Moscow things changed. I started making it more and more. And more, so now it evolved enough to say another word about it. You can also regard this as my farewell to the summer. It's time even for me to admit that summer will very soon be gone together with the proper tomatoes. So I find myself making it one more last time. And one more...

Moroccan mint tea and stuffed dates

I absolutely adore Moroccan mint tea. After a tagine dinner there is nothing better than this hot and aromatic lightly sweetened drink. You pour it (in an ideal world from a silver pot into colored glasses) and sip it throughout the evening. It relaxes you and makes you smile. Moroccan meal doesn't really need a substantial dessert to follow it. However once I tried these dates stuffed with pistachio marzipan along the mint tea and it turned out that these two really work magically together.

Sweet Orange Florentines

I really, really want you to make these. These are the best cookies I've ever tasted, seriously!

And I know you're going to see the anise extract in the recipe and say, "Ew, licorice," but DON'T BE LIKE THAT. I actually HATE licorice flavor, but the anise extract here is just enough to give an amazing depth to the orange, not enough to make the cookies licoricey. I promise.

These cookies are so different than drop cookies and were therefore a fun new experience for me. Make sure you only use a teaspoon of mixture for each cookie even if it looks tiny, because they spread out into the beautiful lace you see below.

By the way, in terms of finding anise extract, I found mine at Super Wal-Mart in the grocery section, but some grocery stores also sell it over by the vanilla extract. I wouldn't leave it out.

Aidina's carrot cake for my granny

I happen to love carrot cake. From American style cakes this one is my favorite. For a long time I kept trying it in Moscow bakeries and I have to say I do like it almost everywhere. I figured out what an ideal carrot cake for me would taste like though. I love when the cake itself is very moist. It easily crumbles and I can recognize coarsely chopped crunchy walnuts. The cream cheese frosting tastes strongly of cheese and is even a little salty. And now, thanks to my beautiful friend Aidina I can make it at home.

Buttery Almond & Coconut Morning Buns

Dear Cooking: I've been Livejournalling since 2004 -- 5 years before my food blog began. I keep an updated personal journal on LJ to this day and view it as my primary personal space; LJ is not an advertising medium for me. In the communities I participate in, I always post photos and recipes and engage with others in a genuine way. Of course I'd love for people to want to see more of my writing; I don't know what writer wouldn't. But I post all my content here because I want my contribution to the communities to be valuable. If folks click-through to my blog because they'd like to read more, that's an added bonus for me.

Despite all of this, I worry when folks speak of "self-glossers" in various threads, that they're talking about me (cue Carly Simon). If you'd rather me not post here, I won't. Maybe I'm just being paranoid, but I'd rather ask than just feel nervous about it.

Now that that's out of the way (gulp), I have a really fantastic recipe for you. These Buttery Almond & Coconut Morning Buns could easily double as dessert. They are fluffy, gooey, buttery, and beyond delicious. There's a lot of butter in this recipe, making it a special occasion treat, but I hope you'll find a space for these rolls on your Easter brunch table. They definitely belong in the spotlight.

Vegan cream of mushroom soup

This cream of mushroom soup is vegan - so no cream! Instead, blended cashew nuts made this soup creamy without overpowering the delicate flavour of the mushrooms. I really enjoyed this and I'm not even vegan - more protein, less saturated fat and less cholesterol than normal cream-based soups!

Florentine cookies

Last Monday was my mom's birthday. She went for a MacBook (yes, she does listen to me sometimes) but I still wanted to present something hand made. So on Sunday my little bro and I got together at the kitchen to make her favorite florentines. They are continuing the series on Christmas baking.

What's special about florentines are these almond flakes and candied fruit set in buttery caramel. Though the cookies originated from Italy they are mow baked in France and other European countries. Thus there are now many different ways of making them. This variation is not the most conventional, but certainly the most loved in our house. First it has a short base on which the caramelized nuts rest. Second, it doesn't use chocolate. Somehow I always preferred to avoid chocolate in florentines, though most of the recipes do call for it. It is just too strong and doesn't let me feel their fine flavor in full. However if you do like this combination, just follow the recipe and then dip each of the ready florentines into melted dark or white chocolate for half of their width. Let them set and enjoy.

Florentine cookies

makes 40 cookies

For the pastry:
75 g cold butter
50 g sugar
200 g all purpose flour
zest of 1/2 lemon
tiny pinch of salt
1 egg
1 tbs cold water

For the topping:
75 g butter
75 g sugar
1 tbs honey
3 tbs heavy cream
tiny pinch of salt
zest of one lemon
120 g candied fruit (pineapple is my favorite, but to be closer to classics you could use candied lemon or orange peel) chopped into 5 mm pieces
100 g almond flakes

For the pastry combine the cold butter, flour, sugar, lemon zest and salt in a food processor. The mixture should resemble bread crumbs. Add the egg and water and quickly mix again. Take the mixture out and shape it into a ball using your hands. Do not overwork the pastry, otherwise it will come out too firm when baked. Put the pastry in a plastic bag and place it in the fridge for 30 minutes (this will make it easy to work with later). Roll the pastry on a baking paper into a rectangle 5 mm thick. Bake it for 5 minutes, take out of the oven and let cool on the baking sheet for 10 minutes.

In the meantime, make the topping. In a medim size heavy base pan combine the butter, sugar, honey, cream, salt and lemon zest. Place on low heat and cook stirring gently till everything melts together. Increase the heat to medium and bring to the boil. Cook for 5-7 minutes till the caramel thickens (the texture should be like this). Take off the heat, quickly add the candied fruits and almond flakes and stir to get them coated in caramel. Transfer the mixture on the prebaked pastry. Using a slightly oiled knife or palette spread it into even layer and press down slightly.

Bake at 180C for 10 minutes. Take out of the oven, transfer (together with the baking paper on a cooling rack and let cool for 3 minutes. Cut into squares of 3-4 cm. Let cool completely. Store airtight at room temperature. To store longer that a week, freeze them in a plastic bag. Take out of the fridge 20-30 minutes before serving.

Hi all :) I'm looking for a recipe for a healthy vegetarian (not vegan) fruit and nut type bar - preferably without needing to purchase anything sold only in 2 pound tubs like special types of flour or protein powder, which other than this recipe will never be used.

Bake or no/bake doesn't matter, but I would prefer something with a degree of stability as these may kick around in purses and laptop bags before being eaten.

Do you have any suggestions?

Peanut Butter Pie for Mikey

As some of you might have heard, a beloved blogger's husband recently passed away suddenly from a heart attack. She posted on her blog (http://www.injennieskitchen.com) that she'd been meaning to make a peanut butter pie for him but hadn't gotten around to it. In his memory, she asked that we all make peanut butter pies.

I made this peanut butter pie for my Dad's 60th birthday. It's almost no-bake (but you do bake the crust for ~10 minutes), creamy, and delicious -- and the perfect way to celebrate loved ones <3 I hope you'll find a time in the coming weeks to whip up a peanut butter pie for your family.

Chocolate and Pistachio Cream Cupcakes

It's Cupcake Week on Willow Bird Baking! Last week was quiet around the blog, in large part because I was conducting a summer camp for middle schoolers. Not one of those sleep-in-tents, get-harassed-by-cheeky-raccoons, feed-your-body-to-mosquitoes kind of summer camps, but the kind of summer camp dreams are made of: CUPCAKE CAMP.

Cupcake Capers was a 5-day camp where campers learned to bake, fill, and frost cupcakes. We eschewed pedestrian cupcake flavors in favor of creative combinations that I now get to share with you! Every day this week I’ll be posting fun memories and recipes from Cupcake Camp on Willow Bird Baking. Here's the first recipe I posted! These moist, creamy, salty and sweet Chocolate and Pistachio Cream Cupcakes were one of the campers' favorites all week long!

It looks like there is a pattern in my vegan baking. Things work out exactly from the second attempt. That was the case with banana upside down cake as well as oatmeal cookies. Now the pumpkin muffins did the same and I can’t tell you how happy I am at breakfast time.

Potato Chip Cookies

I got this recipe from my grandma, and I fell in love with it! It make delicious vanilla-y cookies that have a salty crunchy bite, and a sweet finish! The texture is akin to a shortbread cookie, I might experiment with making them a little bit more chewy. It's also a great way to use up those crumbs at the bottom of the chip bag!
