Happy birthday to me!
It was my birthday on Sunday 28th Dec. I planned this for weeks... a completely vegan version of a bacon double cheeseburger. You can just see the potato wedges, onion rings, barbecue sauce, vegan garlic mayo, and Cherry Coke.







If you are interested, the veggieburgers are by Fry's Vegetarian, the "bacon" by Redwood, and the soy "cheese" slices are by Tofutti. I got them from Holland and Barrett.

Trashy spaghetti, trashy cabbage!
Alright, I'm waaaaaaay too busy to turn out some fancy shit for dinner tonight, and plus, I'm rounding out the home base of PMS with a monstrous craving for spaghetti.

Before I run to the store, does anybody have some trashy, delish and cheap tricks for making my spaghetti even more awesome? I'm up for pretty much anything but only have access to a little grocery with no 'natural foods' section (so no seitan or other fanciness).

Oh, and as I must subconsciously get off on combining foods that don't make sense, this will be served with steamed cabbage. I know. It doesn't make a lot of sense, but I've gotta use up all this cabbage as well! So cabbage tips would also rock.

Boca Pig Out!
I found some Boca Chik'n Nuggets on clearance at Target a couple days ago (don't you always wonder why some foods are on clearance?, I mean, is something wrong with them?), and I was so happy to see that they are vegan, even with a little "Vegan" displayed on the top end of the box! Last night I heated up about half in the microwave, and ate with some spicy brown mustard, and Vegenaise, and they were SO good I heated up the rest and ate them too - I ate the whole box! Close to my day's need for protein, but wow, not sure I should be pigging out on this sort of thing:



Ingredients: NUGGET: WATER, SOY PROTEIN CONCENTRATE, SOY PROTEIN ISOLATE, TEXTURED WHEAT PROTEIN (WHEAT GLUTEN, WHEAT FLOUR), CONTAINS LESS THAN 2% OF: WHEAT GLUTEN, YEAST EXTRACT, METHYLCELLULOSE, SALT, SPICE (CONTAINS BLACK PEPPER), NATURAL FLAVOR (NON-MEAT), HYDROLYZED SOYBEAN AND CORN PROTEIN, HYDROLYZED CORN GLUTEN, ONION POWDER, SUGAR, SUCCINCT ACID, THIAMINE HYDROCHLORIDE (VITAMIN B1). I found wasabi cashews in the dollar store on friday. I bought 2 bags and I am loving them. I've only ever had wasabi peas before so I didn't know these even existed! Yuuummmm!

Does your dollar store carry any tasty treats? I would say buying food in the dollar store is pretty trashy :)

Trashy Pan Asian Tofu Cubes~Spicy Edition
OK,I use Reduced Calorie Firm Tofu for this,but any firm tofu will do.
I put about 1/2 and inch of veggie oil in a no stick frying pan ,and let it start to heat up.

Then i take out my tofu ,and i usually use half the brick in the container ,but it depends upon how hungry you are.
I let it sit on a paper towel and roll it on all sides to absorb some of the excess water.

Then I cut it the entire length of the block, in half.
I then cut it into 1 inch cubes across and widthwise ,both layers .
And there are my happy cubes .
You can make them smaller in size if you like .

I then take out the Japanese panko bread crumbs .
I put about 3/4th a cup in a bowl .
I added a generous amt of shichi togarashi .
Which is Japanese "seven spices".
Its their hot spice . They use it a lot in soups and on the top of meat on rice dishes.
You can find it in most asian markets ready made .
I use a Japanese brand myself .

So i add the spices to it , and mix it up ..
And you can add other dry things ,to your own taste ,to the panko .
Black pepper ,chili pepper .
Like that .

Then i lightly toss the cubes ,one small batch at a time, in the panko mixture.,.coating each side .
I do this until all the cubes are coated .

Then i pop them in the heated oil ,carefully .
I let them brown on each side,which is maybe 4-5 min a side,,I turn them 3 times usually .
I dont let the panko get too dark.
Then i remove them all, and drain the excess oil on paper towels ..

For dunking sauce ,i mix about half a cup of Thai Sweet Chili sauce (its used mainly for marinating chicken,but i use it in salad dressings and a few other things ...it does have a kick to it..i like spicy !! )
I buy mine at the big asian market near me.
I usually buy 3 bottles at a time,so i always have some in the house .

I add to this,a splash of soy sauce for salt,and a few splotches of the hot sauce i have in the house.
You can also add finely chopped fresh cilantro ,and a spash of fresh lime juice to it,but that takes away from the trash factor a bit..

Poor Mans Pasta Fagioli
Future Reference:
I am not a purist when it comes to being vegan,so i will use things like canned chicken stock and such .. .
You guys can substitute whatever it is you use for your stock in such cases.

So forgive me when i post those things.
Blanket apologies for this indiscretion ,now..
But here ya go ..

This makes 2 healthy sized portions,or 3-4 bird like eater portions .
It lasts me 2 days .

Measure out a nice healthy helping of smaller sized pasta ,like ditalini , small shells,wheels .
About a cup + 1/2 cups worth .
Throw these in boiling water,with or without salt.
I cook pasta unsalted ,but this was because i had adjusted my cooking for my moms health needs,and then i got used to low low salt cooking,but salt away to your hearts content.

Then find the really old sun dried tomatoes sitting in her pantry, WAY at the back ,that you bought and forgot about, 2 years ago.
Take out about 10-12 of them and cut them into 1/2 inch pieces .
I usually use the ones NOT in oil ,but this is a personal prefernece .You can use the ones in oil for sure though .
Set aside in a little dishie .

Heat up about 2 tables spoons of olive oil in a pan,,,throw in 2-3 chopped up garlic cloves.
You can do less,but i like garlic .
If the mood hits you ,you can also add a bit of chopped up onion here,about 1/2 a small onion is about right ,but this is optional if you dont like onions.
I add them myself .

You can also add a bit of chopped up red bell pepper here too.This is a matter of taste. I dont add peppers to mine myself.But you can ,if you want to burp them all night .

Throw that all together in the pan, and saute until they all start to wilt a bit.
Then add the sun dried tomatoes .
Here i salt and pepper to taste,and i add a heathy pinch or 2 ,of crushed hot red pepper flakes.
Let this all get hot and dry at the bottom .Lower the heat ,and then keep adding HOT water to it now,so it doesnt burn .I do this by adding the hot boiling pasta water with a ladel,like 2 ladels full at a time.
This will make a nice sauce .
At this point ,add one can of strained and rinsed White Cannelli beans .
stir stir
Cover and let simmer ,and add water again if need be .
stir stir

Watch it so it doesnt burn at the bottom .

Once the pasta is done (i like it a bit al dente) ,strain it ,and turn the heat off the veggies pan .
Here we dump the pasta into the pan with all the veggies..
toss toss..
Salt and pepper a bit more if you need it to taste.
You can also drizzle a bit a virgin olive oil on top ,and a dash of chopped parsley ,to top it off at the very end if you like.
EAT !!

You can put cheeze on top of this,but i find that blasphmeous ,but it would make it more trashy ..

Bachelorette meal #1
I used to live on a tight budget and for a while I had to eat a very strict diet. I basically had to go vegan for health reasons. I lived off of the following recipes and I still make them whenever I am just cooking for myself :) I call these bachelorette meals. This is thanks to a conversation where my boyfriend and I told each other about our trashiest meals that we loved to make before we lived together.

Bachelorette meal #1
Box of couscous (like Near East brand)
Pre-minced garlic from a jar
Smart balance "spread"
Basil
Lemon juice
Drained can of garbanzo beans

Mix everything together and eat your giant sadness bowl for one.

Bachelorette meal #2
Yellow rice
Red kidney beans
Ketchup
Tobasco sauce
