Finally, a Challenge Winner!

Alright, I'm going to call it quits on this challenge so we can move on and start a new one. We declare Mom and Dad winners with their Chocolate Sauerkraut Cake. They definitely used the most unusual dessert ingredient. Way to go! Sorry we did not complete this challenge either, as you all know things have been a little rough at our house. However, I still intend to make a dessert with a unique ingredient, I got the recipe for it over our holiday break. I'll let you all know when I make it!

Hi there!

HELLO! Wow what has happened to everyone? I just keep forgetting to post our meals, I need to start writing them down cause I can never remember them. I thought I would get on and post about our unusual dessert that we made. We made mom's Chocolate Mayonnaise Cake. We played it safe, sorry. We did have friends over that night so that was exciting to have them taste it for their first time (it was also exciting to have friends that want to hang out with us). I love this cake it is so moist and I could eat a whole bunch of it because it is not to rich. Thanks for the interesting challenge Jackman's, sorry it took us so long to do it!!

Saturday: Lentil Fattoush Salad

Sunday: K-lentil salad J-left over pasta

Monday: Veggie enchiladas

Tuesday: red and green winter soup

Wednesday: Mahi Mahi with roasted veggies and quinoa

Thursday: K- leftover enchiladas J-ate some junks at a work thing

Um... I was wondering if the food challenge was still on or if we are moving to a new one. I obviously haven't done it yet and was thinking I might this weekend unless we are over it.

Jackson Meals

  • Wed. - Free-4-All (our Wednesdays are crazy! Luke has scouts from 4-5, Isaac has them from 6-7 and S, B and A have them from 7-8:30!)
  • Thurs. - Free-4-All (I don't remember what happened this day, but we obviously went for easy...again!)
  • Fri. - Little Caesar's Pizza (We had YM/YW Talent Show!)
  • Sat. - Chuck-a-Rama (To celebrate Luke's Baptism.)
  • Sun. - Chicken Noodle Stir-Fry
  • Mon. - Free-4-All (This week should have been called that!! HA)
  • Tues. - McDonalds

Unusual Dessert Ingredient

We did it! We made Chocolate Sauerkraut Cake.  It is a little bit drier than we thought it would be and a little crumbly.  It has a bit of a different taste to it but I don't think it was too bad. Benji says it is okay but not one to do over.  We gave the Jacksons half of it. IJ and BJ liked it the others didn't. The frosting is great, it is the recipe from the spumoni cake. Thanks for the fun challenge, Lucy!

Jackson Meals

Let's see if I can remember!

  • Wed. - Raviolis
  • Thurs. -????????
  • Fri. - A, B, S, and I were on a camp-out. L and I had Panda Express. (As we left the resturant, Luke said, "I wish I never had to leave!")
  • Sat. - Date night. Boys - Free-4-All. Aaron and I ate at our Dinner/Movie place. I had a Teriaki Chicken Wrap and Aaron had a Pulled Pork Burrito.
  • Sun. - Tacos
  • Mon. - Orange Chicken
  • Tues. - McDonald's

Meals and challenge entry

We are going to follow Kim's lead (only two weeks late) and try and get things going again. For last week we had
Sunday: Split Pea soup (weight watchers cookbook)
Monday: Whole wheat spaghetti with pesto and broccoli
Tuesday: Curried tilapia with cilantro quinoa (we actually used Kim's cilantro lime salad dressing in the quinoa and it was super yummy)
Wednesday: Whole wheat spaghetti with pesto and green beans
Thursday: Brats with broccoli and cheese noodles
Friday: Dinner at the Bijou (we saw Tinker, Tailor, Soldier, Spy). I had a hot dog and popcorn. Meg had nachos.
Saturday: Sushi

Meg also completed Lucy's non-dessert food dessert challenge on Sunday. She made her delicious potato cinnamon rolls. They are super moist and fluffy. Always a hit! We did not eat all of these by ourselves, even though we could have... Oh yes, and Meg used red currents this time instead of raisins. They are good, but possibly too tiny to offer the same effect as raisins.

Let's get this started

Ok well I am going to get things going again with our meals for the last week. Most of the week we were in Las Vegas with Jeff's family.

Friday: Went to one of our favorite Mexican restaurants. K-Shrimp fajitas, J-Flautas
Saturday: Christmas eve dinner. Prime rib, garlic mashed, salad and rolls.
Sunday: Leftovers from the day before
Monday: Homemade Pizza
Tuesday: Pulled pork sandwiches with coleslaw and broccoli (Jeff's bro-in-law makes the best pulled pork I have ever had)
Wednesday: Leftover before we took off to the airport
Thursday: Black bean and veggie salad.

I hope everyone had a great Christmas. Can't wait to hear about all the yummy food.
