2012 Year in Review

We have had a blessed but tough year.  I've been extremely slack in blogging so I thought I'd compile a list of The Register Family's 2012:
  • Leslie opened a brand new pharmacy and began change in job
  • Leslie hit the pole in the drive-thru at her new pharmacy resulting in lots of damage to her vehicle
  • Reid turned 1
  • Reid's baby dedication at church
  • discovered Garnet had kidney stones to treat on top of her other issues
  • Reid got tubes in both ears
  • Riley's first girlfriend...Lily Cook
  • Riley continued soccer at school with HappyFeet
  • Riley's 1st trip to the Dentist
  • Went with entire Stevens side of family to Seabrook Island for vacation
  • Leslie and Carly taught Bible School for first time at BBC
  • Riley went skating for the 1st time
  • Reid got a hip infection that resulted in pneumonia a few weeks later
  • Took weekend trip to Pigeon Forge, TN including first trip to Dollywood
  • Riley was a ring bearer in Johnny and Chelsea's wedding
  • Reid started walking at 17 months
  • Riley started Awana at church and learned Bible verses weekly
  • Riley attended 5 Carolina home games
  • Jeremy and Leslie got to go to Casey's wedding in Hawaii
  • Leslie's dad had a psychotic breakdown resulting in turning into a raging alcoholic wreaking havoc on the entire family
  • Riley was Batman and Reid was Robin for Halloween
  • Riley turned 4
  • Riley mastered counting to 20+, recognizing the alphabet, and recognizing numbers even up to 3 digits
  • Leslie/Jeremy paid off Leslie's car early
  • Reid attended his first Carolina game
  • Went to Pigeon Forge, TN and Dollywood with The Cooks
  • Leslie's car got hit while putting Riley in his car seat resulting in damage to her vehicle (everybody ok except Leslie's leg bruised)
  • Reid got the flu during Christmas
  • Santa brought Reid Mickey Mouse and Riley and Leappad that he calls his iPad
  • Ava-Reese spent the night with Riley for the first time--they slept in a tent in Riley's room
  • Celebrated New Years Eve at home with Leslie's Chimichangas and watching football

Shrimp & Grits--Attempt #1

Ok so while at the beach for the first time ever we cooked a Low Country Boil with shrimp, sausage, corn, and red potatoes.  It was wonderful! So now that I'm not afraid of cooking shrimp anymore I decided to give Shrimp and Grits a try.  My friend Julie suggested Hominy Grill's recipe but I failed to remember that she said Hominy Grill and I looked up Paula Dean's recipe instead. I plan to try the Hominy Grill recipe in the future.  But here is what I came up with  based on my own ideas and by adapting Paula Dean's recipe for her Shrimp and Grits!  And sorry I don't really measure stuff!

Bacon
Garlic
Green Onions
Shrimp
Dash of White Wine
Butter
Heavy Cream
Hot Sauce
Salt
Pepper
Grits
1/2 block Cream Cheese
Cheddar Cheese

I poured water, salted it, and brought it to a boil in the small to medium size pot that I always use for grits.  When it came to a rolling boil, I dropped a tablespoon of butter in.  Then I slowly whisked in grits until it looked right but just a little soupy.  Then I added a half a block of cream cheese and about a handful of shredded sharp cheddar and whisked the grits.  I kept them simmering on low.

In the pan I had cooked the bacon, I left a little bacon grease and the bits.  I sauteed the garlic then added the green onions. I chopped the bacon and returned it to the pan.  I cooked the shrimp.  Then I removed all from the pan.  I deglazed the pan with a dash of white wine.  Then I slowly whisked in the heavy cream, added some hot sauce, salt, and pepper then let it simmer/boil until thickened.

I put the grits on the plate first, followed by the shrimp, and finally poured the sauce over the shrimp.

It was good enough that I thought I should share it but it isn't great yet.  Would love to hear suggestions.  Next time I plan to add more hot sauce.  And in the pan with the shrimp I may add some red pepper flakes and maybe even mushrooms.

Porch Mornings

Riley is his Momma's child to say the least!  At home we enjoy sitting on our porch under the fan.  Usually I'm reading a book and he's playing around the table with his racecars.  He begs to eat dinner out on the porch and up until the 100+ degree weather most nights we did enjoy dinner on the porch!

At the beach I always wake up super early (like 5:30-6:15ish), grab my book, a bottle of water, and hit the porch to read while the sun rises.  Well being his Momma's child, Riley got up about 10 or 15 minutes behind me each morning, sliding the glass door open, and there was the end of my book reading!  But it was ok because as much as I LOVE reading at the beach, my favorite memories of this past beach trip include my special morning porch time with Riley! He would usually curl up in my lap and snuggle with me for a few minutes.  Then he'd usually ask for a granola bar or cheese crackers to eat.  And oh how he enjoyed watching the shrimp boats go out!  We saw dolphins, egrets, pelicans, and morning dog walkers! 

But on the last day God gave us a most special last beach morning memory to share! Riley said, "There's a deer!"  And I didn't believe him because I hadn't seen it and we'd been talking about seeing deer all week long.  Sure enough, not only was it a deer but the deer was right below or porch not even quite on the sand dunes! The deer looked at us and went back to eating and didn't even move! then we watched him slowly make his way over the dunes.  So exciting for a 3 year old and I must admit, there is something special about seeing deer on sand dunes with the ocean as the backdrop.  I didn't have my camera with me but have the memory nonetheless!

Merry?? Christmas! HAPPY New Year!

Christmas was difficult for me this year.  Within 6 months time, I lost my paternal grandma (Gaga), had a baby, lost my great-uncle (Dennis) that lived next door my whole life, found out my pharmacy was closing,lost my maternal grandpa (Papa), and began opening a new employee pharmacy.  When I reflect on 2011, all that I can think of is the word CHANGE.  Life has obviously changed drastically when you think of all of the examples above.  I don't like change.  Change is difficult for me.  But at the same time I have a lot of respect for change.  Change can make you grow as a person.  Change is just a part of life.

I wanted to be so happy this Christmas.  I have a 3 year old who was a lot of fun and it was my 7 month old's 1st Christmas.  Normally I buy gifts throughout the year but just could not get started early this time.  I literally dreaded the holidays because with the holidays came the noticeable changes to my family.  3 influential people were going to be missing this year.  And my job was at an all time high stress level with me working way too much.

First, I started making my Christmas list and accidentally wrote down Papa's name.  Then I found grandparent picture frames I had bought ahead of time with the intention of giving them to the great-grandparents with the boys' picture.  Next our traditional breakfast got changed which made me feel the missing pieces that much more.  One Sunday I witnessed several people walking out to graves at the cemetary after church and I just couldn't hold it any longer.  I had a good cry right there in the car in front of the boys and all.  Finally, on Christmas day we celebrated at Aunt Joan's and obviously Dennis' presence was greatly missed.  I especially missed seeing him in the kitchen spicing up some of the ham (even though he didn't get to do it last Christmas while he was sick either).  And oh how I wish Papa could see the kids riding their jeep!

I know all Christmas's won't always be this tough on me but I do know that I will always miss with fond memories my Papa Cliff and Mama Cat, GaGa, and Uncle Dennis.  It hurts the most that my children won't have the memories with these special people that meant so much to me.  However, new traditions will take the place of old ones.  For example, this Christmas my parents and Jeremy's parents made it over for breakfast.  This made me so happy as growing up both sets of grandparents always came to my parents for breakfast.  I hope this will be a new tradition for my boys!

I'd like to say goodbye to 2011, which to our family will always be a memorable but tough year. Through every change God was and is still with us every step of the way.  There have been many blessings through the tears and with each blessing I feel God's presence and know his handprint is all over it.

We are beyond blessed with 2 healthy boys!  I pray 2012 will be a great year and that we will continue making wonderful memories together!  Bring on 2012!!

BrotherlyCousinly Love

 
There is nothing like watching the bond of brothers grow.  Riley isn't overly interested in what is going on with Reid but everynight he kisses him goodnight on his forehead and sometimes leans in like he's hugging him.  At school Riley has to take Reid to his class before he will go into his own class.  When you aren't paying attention Riley will be squatted down real low talking sweetly to Reid saying things like, "Reid! Reid! Hey Reid! Goo Goo Gah Gah!"  And sometimes he likes to sing to Reid.  The other day I heard him sing just like this: "Jesus loves meLIFE is a Highway!" Reid's eyes follow Riley's every move and his face just lights up when Riley decides to pay him some attention!

Watching cousinly love is almost just as precious.  Ava-Reese is all about her Baby Cousin as she calls Reid.  She loves to play with his carseat.  She likes to try to hold him too.
3 of the sweetest kids I know!



Wouldn't trade their growing up together for anything in this world!!

Music To My Ears

Riley loves to sing.  His favorite song to sing is Rascal Flatt's "Life Is A Highway" from the Cars movie.  While he sings he often dances, plays his belly as a guitar, plays drums by making fists, or any combination of these. 

He likes to make up songs too while he's playing.  From the time Riley was born, I made up a song that I often sing to him.  He will ask for "Riley's Song" (yes in 3rd person):

Riley, Riley, Riley,

Riley, Riley, Riley,

Riley, Riley, Riley,
You're so much fun!

So lately before bed he has said, "I wanna sing Mommy's song." I'll ask him how it goes and he sings:

Mommmmmyy.....Mommmyyy....
I LOVE MY MOMMY!

Then he says he wants to sing Daddy's song:

Daddy loves basketball
Daddy loves football
Daddy loves racecars
Daddy loves Riley!
Daddy loves Mommy

Since Riley has been consistent in these 2 songs for Mommy and Daddy over the past week or so I figured I should document it so I don't EVER forget them!!

Riley at a recent trip to Chuck E. Cheese
