Some ripe bananas forced me to bake today and we liked it a lot.
I got the recipe from http://www.neverhomemaker.com/2011/08/new-banana-bread.html but I tweaked it a little:
BANANA BREAD
I used
1/2 cup butter
1/2 cup maple syrup
1 dropper of vanilla stevia
2 teaspoon vanilla
2/3 cup coconut milk, unsweetened
2 can garbanzos, drained and rinsed
3 large banana, mashed
2 heaping Tbsp almond butter
4 cups wheat flour
pinch salt
3 teas baking powder
1 teas baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 c. walnuts
handful chocolate chips
Method . . .
In the bowl of an electric mixer, cream together butter and maple syrup. A couple of minute should do.
Then add in the vanilla, milk, garbanzos, peanut butter, and banana. Mix on high with the paddle attachment until everything is smooth. 5 to 7 minutes.
In another bowl, whisk together the wheat flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
Add the dry ingredients to the wet. Mix until well moistened.
Fold in the chocolate chips.
Preheat your oven to 350 degrees F. Then, lightly grease a bread pan (we used glass) and pour the mix inside.
Bake for 30 minutes, then check for done-ness. Then add another 10 to 15 minutes to the bake cycle and keep an eye on the bread so it doesn't over-bake.
Bread is done when a toothpick inserted in the middle comes out clean.
Made 2 loaves.
We ALL loved it. It was so filling and satisfying too! I will definitely make it again, and again, and again.

An alternative to mayo- YUM!
I actually don't like mayo, but sometimes a sandwich just needs something. I made this recipe a couple of weeks ago and have made it again since. I look forward to lunchtime now!
Creamy tofu spread
7 oz. firm or extra firm tofu, drained
1 Tbsp olive oil
2 tbsp fresh lemon juice
coarse salt
BLEND.
The recipe calls for an extra 3 Tbsp of neutral oil such as canola, but I omitted it.
I like to spread it on an open faced sandwich with sprouts, cucumbers, tomatoes and fresh basil. Yum. I desperately need to go to the grocery store so I can get some of these fresh ingredients.

I've been trying to lose weight for 2 years now, and I've had a lot of rules for myself during this time, but I am entering a new phase where I am trying to not have any rules and just trying to be a better healthier person for me and and my family. It's too early to say how this plan is going...
My sister suggested some awesome cookbooks and I have tried really hard to cook out of them for the past month. Summer is hard though and I keep getting interrupted by vacations and family reunions, but any effort is better than no effort at all, all part of my new philosophy.
So, a big part of me being healthy is being prepared. One busy evening dinner wasn't going to happen, I was settling on chicken nuggets for the kids, but I had 10 minutes before running out the door and decided to whip up some sandwich spread for me for the following day. As it was cooking, Ryan walked in and said it smelled yummy, so I served it up. Not only did both boys eat one sandwich, but TWO. That is unheard of me in my life. And if they knew what they were eating there is NO way...the recipe you ask?
Pita Sandwiches with Spinach-chickpea spread
1 Tbsp olive oil
2 garlic cloves minced
1 can chickpeas (garbonzo beans) drained
1 Tbsp lemon juice
10 oz. spinach
1/2 tsp red pepper flakes
2 tsp tahini
Saute all ingredients except tahini. Then cover on med. high 4 min. until spinach is wilted, uncover and raise heat. Cook until most liquid is evaporated.
Blend ingredients with tahini, and 1/4 tsp salt.
served on pita bread with cucumber

Silly me
Maybe I should acknowledge the fact that I've been MIA for several months now, but I'm not going to.
Summer has been fun and busy. A main event everyday for the last 2 months has been swim team. Getting out the door every morning is always crazy, but we did it and it was a very successful season. I love to watch the boys swim. Especially when they compete. They become completely different characters. Ryan, my boy that never seems to move at the speed I would like him to, is quite a fish in the water. He placed 2nd in backstroke and freestyle for the 6 and unders at the City meet. And Jace, he looks amazing out there! His favorite is butterfly. He came a long way this year, diving off the starting blocks, practicing his flip turns (though he hasn't done one in a meet yet).
So to reward them for racing out the door each day, I told them that they could stay up as long as they wanted last night and we wouldn't have to go anywhere this morning. I thought I knew my boys and wagered with Dan that Jace would be asleep by 10:30 and Ryan shortly thereafter. Uh, I was wrong. When Dan left for work this morning at 5:30 Jace was still awake. The story goes that Ryan fell asleep at 4 and Jace at 7. From all the crying and fighting that went on today, I believe it!! And what did Jace do? He watched 28 episodes of Sonny with a Chance, and 2 movies, oh, and played video games. I will NOT be telling the boys they can stay up as late as they want ever again.

Wife award
I will NOT be earning an awesome wife award anytime soon. Dan's birthday was Wed. and we did not get him one.single.present. Nor did I make him a birthday treat. That morning I begged him to let me make him a yummy breakfast, but hot breakfasts aren't really his thing and so he just wanted a grapefruit. At that point I felt like such a loser, I didn't even bother slicing it up for him. He is a wonderful guy and didn't complain at all, let's hope next year I do a little better!

Happy Valentine's Day!
Hope everyone is having a day filled with love. We enjoyed a yummy breakfast of waffles and strawberry smoothies and the kids are already cashing in their coupons, Jace got to wear whatever he wanted to school today and has Nike basketball shorts, shirt and sweatshirt on, Ryan is dishing out the chores that mom has to do for him for the day. Also, in the picture, Ryan is working on a new talent. He is trying to lick his elbow...try it, it's really hard (impossible).

Her idol

Ava wants to be just like Jace. He is such a sweet big brother too. Last night we attended an enrichment for couples and babysitting was provided. We assumed all was well when 1.5 hours after we dropped the kids off, we picked them up. Jace was pouring sweat and come to find out he tried to hold Ava and play games almost the entire time because she kept crying. Here she is trying to copy her brother.
