Our Home Cooking Makeover: Simmered Daikon Radish (Dish #18)
Hello there!
It’s been almost a year since we started our little “home cooking makeover” journey.
Lately, I’ve been trying to figure out how I can prep both main and side dishes in the morning to make dinnertime smoother.
As part of this experiment, I’ve decided to start sharing recipes for side dishes that were a hit at home (including a few “tried-and-loved” ones from others).
Today, I’m sharing the 18th dish in the series:
Simmered Daikon Radish 🥢
This is mainly a personal note for future reference,
but if it inspires your cooking in any way, I’d be so happy!

Ingredients

Here’s what you’ll need (for 2 servings):

Daikon radish ... about 1/3 of a large root
Water ... 100 ml
Soy sauce ... 1 tablespoon
Mirin ... 1 tablespoon
Sake ... 1 tablespoon
Sesame oil ... 1 tablespoon

How to Make It

1. Peel the daikon and cut it into bite-sized chunks.

2. In a small pot, combine:
Water (100 ml), soy sauce, mirin, sake, and sesame oil (1 tbsp each).
Add the daikon chunks.
Cover with a lid and heat on high.

3. Once it comes to a boil, reduce to medium heat and simmer until the daikon is tender. Since we don’t use a pressure cooker at home, it took about 20 minutes for us.
