Hokkaido Powder Belt Today:The Heritage and Future of a Legendary Brewer

    In our previous article, we explored why Asahikawa serves as a hub for Hokkaido’s finest culinary ingredients and introduced a superb local tempura restaurant that brings those flavors to life.
    Today, we are visiting Otokoyama, a venerable brewery that has been crafting premium sake in Asahikawa for over 120 years. Did you know that a thrilling, groundbreaking revolution is currently underway at this historic brewery, completely redefining its traditional image?

    Traditions Since 1899 and the Birth of the "New Otokoyama" in Spring 2027

    Captivated by Asahikawa’s crisp air and the beautiful natural meltwater of the Daisetsuzan mountain range, Otokoyama began its brewing journey here in 1899. Today, under the leadership of fourth-generation president Yokichi Yamazaki and 40-year-old board director Goro Yamazaki—who represents the next generation—the brewery is widely celebrated for its vibrant, youthful energy.
    Now, Otokoyama is approaching a massive milestone. While honoring traditional craftsmanship, they are incorporating modern scientific elements into a brand-new facility designed for year-round production. To make this happen, the long-beloved Sake Brewing Museum (built in 1972) will be dismantled, and operations will relocate to a cutting-edge new factory in February 2027.
    The new facility will feature state-of-the-art temperature control systems. Previously, brewing was restricted to the cold months between late October and early April to leverage the natural climate. With the new upgrades, Otokoyama will transition to year-round brewing.
    For sake lovers, this setup is an absolute dream come true: it means you can enjoy "freshly pressed sake" and "live sake lees (sake kasu)" even in the peak of summer.

    Beyond Sake: Pivoting to Become a "Regional Integrated Beverage Maker"

    The vision for the new Otokoyama extends far beyond Japanese sake; they are evolving into a "regional integrated beverage maker."
    "The sake industry alone isn't seeing right-upward sales growth across the board. In this environment, we want to launch new initiatives centered around our greatest strength: our incredibly delicious water."
    Otokoyama has already begun developing innovative alcoholic beverages, including craft gin and an original lemon sour. Going a step further, they’ve created a unique, caffeine-free non-alcoholic drink by mixing sweet syrup—a byproduct of the distillation process—with milk. What’s more, craft beer production will also kick off at the new facility opening in Spring 2027.
    Seeing how these artisans flexibly repurpose even the residual botanicals from gin distillation into entirely new flavors highlights Otokoyama's true strength: its refusal to blindly cling to tradition.

    A Park for Everyone: Welcoming Families, Children, and Non-Drinkers

    Traditionally, sake breweries have carried a strong image as places exclusively for adult alcohol enthusiasts. However, thanks to a fresh concept spearheaded by the young Goro, current-day Otokoyama has completely transformed its atmosphere.
    The once-formal Japanese garden has been reimagined into an open, inviting "park-like" space where anyone can drop by. Inside the facility, a stylish new cafe corner has been added, serving shaved ice, coffee, and non-alcoholic beverages made from the same pristine brewing water used for their sake.
    "We used to see mostly older gentlemen, but we’ve shifted our concept so families can come and have a great time together. Even if spots like the Asahiyama Zoo happen to be closed for the day, we want to be a welcoming place where visitors to Asahikawa can still make wonderful memories before heading home," they shared.
    True to these words, on the day of our interview, the grounds were bustling with both tourists and locals—whether they drank alcohol or not—all enjoying their time in their own way.

    Even your concierge couldn’t resist! I tried on the traditional Happi coat firsthand to fully immerse myself in Otokoyama’s wonderful hospitality.

    Concierge Recommendations: Coin-Operated Tastings and "This Morning's Sake"

    If you visit Otokoyama, after learning about the history of sake brewing through their exhibits and videos (multi-language videos are available for international guests!), make sure to head straight to the Paid Tasting Corner in the retail shop.
    The system is simple and self-serve: you purchase coins and pour yourself 15 ml tastings of various labels. If you’re not sure what to choose, asking the staff is your best bet. Simply tell them, "I like fruity flavors," or "This is my first time trying sake," and they will warmly guide you to your perfect cup.
    For sake beginners, my top concierge recommendations are Ginjo-shu for its gorgeous floral aroma, and Nama-zake (unpasteurized, chilled sake) for its vibrant freshness. Furthermore, if you happen to visit during brewing season and spot "Imasa no Sake" (This Morning's Sake), consider yourself incredibly lucky. Bottled the very morning it was pressed, its powerful yet remarkably pure flavor will undoubtedly be a highlight of your journey.
    Once you take a bottle of Otokoyama home, I highly recommend experimenting with serving temperatures to see how the flavor profiles shift.

    • Chilled (around 10°C / 50°F): Ideal for beginner-friendly Ginjo-shu and Nama-zake. Chilling locks in the vibrant aromas and crisp, refreshing finish.

    • Warmed / Okan (around 40°C–45°C / 104°F–113°F): Perfect for robust Junmai-shu (pure rice sake) with rich umami. Warming it coaxes out a mellow aroma and deep savory notes that will gently warm your body and soul.

    Pairing these varying temperatures with food—such as matching the crispness of chilled sake against the richness of the Asahikawa tempura mentioned in our last article—unravels the profound depth of sake appreciation.
