
Let me talk a little about coffee.
Fifteen years of roasting. I've talked about beans, about brewing. But I've rarely talked straight about the work itself — the practical side of a roaster's shop.
Today: the exhaust system.
A roaster needs strong airflow to pull smoke and heat outside. Our shop runs two heavy-duty ventilation fans alongside the main exhaust duct. That's what keeps the white walls white.
A roaster needs "hiku-chikara" — the pulling force. Invisible work shapes the space.
The brown walls you see in some coffee shops? Often a sign of weak exhaust. Customers don't see it. The air keeps working anyway.
This is where I'll talk about coffee — casually, at my own pace. Once a week or so. Just one thing at a time.
