Adventures in Electric Pressure Cooking

My bestie Jamie was telling about how much she loves her electric pressure so I decided to purchase one and see what magic I could make. I came up with a delicious, south of the border concoction. I call it "Mexican enchilada rice" (creative, I know). Anyway it was sooooper easy to make and totes yums!

1 c. Brown rice
1/2 c. Water
3/4 c. Red enchilada sauce
5 frozen chicken tenders
1 chopped green onion
1/2 c. Sliced black olives
1 can of black beans
Chopped cilantro
Sour cream
Taco seasoning

Add the rice, water, sauce, and taco seasoning to the pressure cooker. Set for 15 minutes. The pressure cooker takes about 5 to 10 minutes to meet the correct psi. Once the pressure has been met and its been cooked for 15 minutes, release pressure. Add drained can of beans, chop the chicken, and green onions. Serve up and top with cheese, sour cream, and cilantro. Serves 2-3 and boy it's delicious. Can't wait to see what else I can come up with...

Blubbery

It's not very common that I blog (obviously), or that I check out my friends and family's blogs. One of the reasons I don't check blogs often is because I usually end up a blubbery mess by the time I am done. Okay, so maybe that's an exaggeration. I do tear up quite a bit though... Anyway, when I do check blogs I get to see my close family and friends, most of whom are far far away and I haven't seen in a long time. I love seeing your families grow, and the blessings you've been given, and realize just how thankful I am to have each of you in my life. Yes, it may be at a distance, and we may have been closer in times past, but every moment is something I have to be thankful for. Now more than ever do I realize the importance of good, loyal, loving, and considerate friends in my life. Each of you have been there for me in my times of need; in good times and in bad. I miss you all and am so happy that life has brought you so much goodness. Thank you for being a part of my life. Blubbery mess or not, that I feel is something worth blogging about...

I fell in love in Nebraska...

Dont you just want to pinch her cheeks!?? She is just the cutest thing ever! This is Ginny and Chris's baby, Lila. They recently moved to Omaha Nebraska, so Kim and I decided to take a trip to see them and meet their baby for the first time. It was so much fun and totally made me baby hungry. But it doesn't take much these days for that to happen. Anyway, we had a great time. We got there late Friday night and so we didn't do much but catch up and reminisce with Ginny and Chris. The next morning we were woken up by this beautiful, smiling and oh so happy baby. Chris watched her in the morning while we went to the Winter Quarters temple. Such a beautiful temple (but aren't they all?). Then that night we went out for Omaha Steaks. It was delish! We also got to see our good buddy Andrew that is going to Physical Therapy school at Creighton which was a lot of fun. We played games all weekend long, laughed a lot, and of course adored the baby most of the time. Sunday consisted of the typical activities, church, dinner, games and of course a long nap. Then on Monday we hit up the Church History sites and took a family photo shoot. The trip wasn't long enough. It was so fun to spend time with good friends again. I am so blessed to have such great friends. Ginny and Kim are some of the greatest women in my life and are such good examples to me. I really don't know what I would do without them!

#11 Reupholster two chairs I bought

So I found these really unique chairs at Goodwill a few months ago and have been wanting to refinish them. I wish I had taken the before pictures, but I didn't (sad face). They were really worn wood, the finish stripped and the seats were so dirty that I thought they were brown, not striped floral (yeah, it was that bad). Anyway, so these are the finished product. One item checked off my list...29 to go.

#1: Do ordinances in 30 temples...


So, one of the items on my "30 before 30" list is to do ordinances in 30 temples before I'm 30. I would ideally like them to be endowment sessions so I can see the celestial room, but I don't have that much time, and may not have the means to make it happen. We will see. Anyway, in order to best decide if this goal is going to be able to be met, I thought I would make a list of the temples I have been to, and start the countdown. (If you aren't a member of my church and have NO idea what I am talking about, this website will maybe give you an idea of what I am referring to)

Get packin'...

So, many of my friends at work joke about me being the "traveling girl" cause I am jetting off every weekend. I can't say that they are wrong. Last weekend I went to Utah for one of my mission companion's weddings, this weekend I went to San Diego with friends, next weekend I am headed to Omaha Nebraska to visit the Johnson's. I decided I needed at least one week to recouperate before taking off to a friend's cabin up north, then off to Lake Powell with friends and family. What can I say? I'm young, single, and love life! Here's a small snapshot of my adventures:

This weekend (May 21-23)
My good friend Camille invited me to join her and a group of people to San Diego for the weekend. We had a great time. We went to the San Diego temple which was amazing! They were so accomodating and let us take a "Grand Tour" after our session. That place is definitely a Bride's palace. Afterwards we met up with the boys at Mission Beach where they were playing volleyball. After breakfast on the beach, and after getting a little chilly, we went hot tubbing and swimming and then back to the beach once the weather warmed up. It was a great trip with a great group of people. So thankful to have such great friends.

Last weekend (May 13-16)

Last weekend I went to Utah to see friends, family, and go to my dear Christin's wedding.
I trained her on the mission and we had many great times together. It was so great to be able to attend her sealing in the SLC temple. Just 7 months ago she and I sat outside our mission reunion talking about the woahs of single life and our lack of wholesome interaction with the male species. Just 3 months later she met her husband. So happy for the new Mrs. Harper!

I met up with some of my college girls and their kids at the Spaghetti Factory for lunch. It was so nice to get together and catch up, reminisce, love their kids, and watch them run around the restaraunt. I love that no matter how long the time spans between our visits, our friendships remain just as strong. These girls are amazing and such great examples to me. I love them so much and don't know what I would do without them. (Not featured are Alicen whom I met up with later, and Trisha who I just didn't get a picture of. Silly me! She's preggers and just super cute!)

Needless to say folks, I am very blessed. I have wonderful friends, and family that fill my life with joy and many reasons to travel. I love to spend time with them, laugh, create memories, and remember how full my life really is.

"30 before 30"

So, I have this friend, Karen Hinkle, and she is inspiring. She decided to make a list of "30 things to do before 30" and I got so excited that I made a list of my own. Now, she is starting the countdown of her list on her 29th birthday which is tomorrow, so I have a little more time, but I am really excited about it. One of the items on my list is to blog all of my accomplishments/adventures so I will keep you posted. The following is my "30 before 30" list:


  1. Perform ordinances in 30 different temples (this includes temples I have already visited which is only about 15 so far)
  2. Complete the YW personal progress (I did the old one when I was in YW, but I want to do the new one)
  3. Finish my FHE box (I have a box of FHE lessons that I have been trying to finish coloring, laminating, and getting ready to present that I want to complete)
  4. Finish decorating my downstairs bathroom.
  5. Finish decorating my master bedroom and bathroom.
  6. Finish decorating my kitchen.
  7. Take a photography class
  8. Take an oil painting class
  9. Decorate my living room wall with my own artwork.
  10. Re-finish my kitchen table
  11. Re-apoholster two chairs I bought.
  12. Make a salad out of items that I grow in a garden.
  13. Finish my Masters in Psychology degree
  14. Successfully complete P90X
  15. Get back to a size 6/8
  16. Go to the Grand Canyon
  17. Work on building up my food storage monthly
  18. Make a quilt
  19. Make a Calendar with my girlfriends :)
  20. Go on a Singles Cruise
  21. Go to Havasupi
  22. Write a Children's book
  23. Write an article to the Ensign
  24. Compile my family history into a book
  25. Go to the Price is Right
  26. Go to a Rodeo
  27. Organize all of my photos from childhood till current
  28. Read 15 books (for not having much time for reading, this will be a toughy)
  29. Travel across seas (preferably Italy)
  30. Learn to cook at least one new different recipe a month and share with friends.

So, as you can see there are a lot of things that I would like to accomplish in the next two years. Oh, one of those goals is going to be to blog everything and then at the end, compose a book of my adventures. Now, Karen has a consequence for not accomplishing her goals, which I have not done. Her biggest fear is water, so her consequence is to go white water rafting if she doesn't get everything done on her list by the time she's 30. My biggest fear is getting in a huge car accident in the snow; but I don't know how I can make a reasonable consequence out of that. So, if you have any ideas, send them along my way.

New Beginnings




So, I realize it has been quite a while since I've blogged and quite a bit has happened in the meantime. The most exciting thing is that on March 29, 2010 I closed on my first home! It's kinda scary to think that I've officially made AZ my home, and realizing the committment that being a homeowner brings with it is kinda nerve wracking. However, I am really excited and feel very blessed to have this opportunity. It's a beautiful home and will be a good investment for me. It's also nice to have something to call my own, and call home.

It's 1680 sq. feet, 3 bedroom, 2.5 bath and was built in 2006. It was a shortsale (meaning that it took forever to go through), but when it finally did, I knew it was the right home for me. I've dealt with the ups and downs of looking for a home for a year now so it's nice to put that to an end.

Mom and Dad came out for a week to help me get settled in (and help me take all of my crap off their hands--I have a LOT of stuff!). Dad was in hog heaven doing projects around the house and my mom performed as the amazing seamstress that she is. A week of sweat, aching muscles, and long days and nights, I'm finally settled in. Roommates are on their way...

I didn't get pictures of the Master Bath, or walk in closet (clothing room--it's HUGE!), the downstairs bathroom, or the patio. So, I am sure there will be more pictures to come.

More blogs to come as well. I've made a new resolution upon turning 28 this last week. Thank you to the inspiration of my dear friend Karen, I've made a list of 30 things to do before I'm 30 and as I check each one off my list, I plan to blog about it. I need to do some refining to my list, but soon I will post it and begin the countdown.


All in all, I've truly been blessed. Everyday I am amazed at what God has given me. It's amazing the things that He does for us when we simply put Him first in our lives. I am far from perfect, and just am overwhelmed at all He has given me and feel so unworthy. I have the best family, amazing friends, and I have been given a beautiful home and furnishings. I have a great job, car, clothes on my back, and food on my table. The list could go on forever, and I will forever be grateful.

Hope you like my house. I still have a lot of decorating to do, but that will come in time... I love it! (Feel free to come see it in person if you feel so inclined :)

Ask and ye shall receive... or Act and ye shall receive?

It's not always an easy thing to do; acting in faith. Sometimes when we have decisions to make and we take them to God in prayer, He will give us answers that require us to make sacrifices we aren't ready to make, or tell us things we may not want to hear. We may not understand the answers we receive because of our limited view. We see what's right in front of us and sometimes find that the answers we get don't fit into our equation for happiness.

However, when we get answers that we know come from God, he wants us to act on those answers. We are human and thus have our own emotions and feelings, and sometimes Satan uses those to tempt us to doubt and question the answers we receive. We want to understand why we are getting those answers, or want to see what would happen if we act. Sometimes we hold off on acting because we are scared, or don't know what the outcome will be so we are hesitant to do anything. Sometimes all we want to do is the "right" thing, but have such a hard time distinguising between that, and our own emotions. Or maybe we struggle with having the courage to act on the answers we receieve because of our own desires, or an unseen outcome. We walk through life blind to the outcome of our actions sometimes. But God has promised us blessings as we follow the spirit.

We are required to act, and then receive. Ether 12:6 says that, "ye receive no witness until after the trial of your faith." Asking is the easy part, but acting is where our faith is truly tested. Do we believe that God will bless us if we follow Him? Are we willing to do what in our hearts we feel is right and set aside our own selfish, carnal desires? Do we believe that His blessings are better than the immediate gratification, or results that we know will come from following our own desires.

As life goes on, and Satan continues to pull at me from every direction, I have to remind myself to act in faith. Acting may even mean believing and accepting the peace he brings during trials. Trusting that those feelings of peace, and the answers and promptings received, will in fact come about. Or trusting that regardless of what happens, that God will take care of me.

I know when we act, as scary as it may be at times, God will never forsake us and the blessings that will follow exceed any expectation we may ever have.

Peace for a Princess

Lately I've been on a bit of an emotional rollercoaster (what's new right?). It's a long and complicated story, but involves a boy, one I care a lot about. Amidst the confusion, doubt, and uncertainty of everything going on, there is one place I have found peace on the matter-the temple.



I love the temple. Every time I have gone, especially in the past couple of weeks, I've gone in with a heavy burden weighing on me and always left feeling lighter, more peaceful about everything going on. I feel love and a comfort, knowing that everything will be alright. What exactly that means, I don't know. But I do know that I will be okay whatever happens. God has not forsaken me yet and never will. (I still pray the outcome is in my favor, but know that if it isn't, Heavenly Father somehow has to have something better in store...which is hard to imagine).



The other day I was contemplating some of the things going on in my life, and I was thinking about all the many blessings that my Heavenly Father has given me that I am so undeserving of. I was so happy and felt so spoiled. I was also contemplating on the future blessings that he promises me like eternal marriage, and family, wondering when that day would come and if I could have this fairytale ending like I'd always wanted. As I was thinking of these things an overwhelming sense of love came over me. I felt my heart begin to pound, my throat get tight and tears welled up in my eyes and poured down my cheeks. I then heard a voice, "You are my princess; daughter of a King. All the hard times you've been through have only prepared you for the very best; better than you could have dreamed. You will have your fairytale ending, because you deserve it and because I love you."



When that ending (or beginning to a new chapter of my life) will come and who my prince will be, I do not know. But I know it he will come. I have to keep reminding myself that in the lonely, dark, doubtful and heart-wrenching moments; and have to remember the feelings I've had in the temple, and the peace and answers He has given me, and trust that the Lord knows what He's doing and will continue to guide my life, and the lives of loved ones around me. I pray for the courage and faith to obey, especially in those times when it's hard to do so, and pray that others around me will follow those promptings as well. I pray that my prince will come someday soon and sweep me off my feet. However, if he does not come soon, I pray that I will enjoy the time my Heavenly Father has given me and do the best I can to better myself and be worthy of him.

Expectations

So, here I am; sitting in my "cave" (my cave is my dark corner of cubicle at work). My system is down, and really I can't complain because even though I have a ton of students to call and reprimand for not attending class, it's Friday and I'd much rather blog about my inability to work. So, now that I've gotten that out of the way...

Life. It's funny. It's fun. It's interesting; and sometimes you never know what to expect from it. So, lately I have decided to not expect anything from it. It's been an interesting viewpoint to take on; one that I haven't really had in a long time, or maybe even ever. I think what is so hard about life is that we build up expectations in our head of how our lives should pan out and when life doesn't meet our expectations we are crushed. This is kind of a natural thing, especially for those of us who are planners. We make plans for our lives, and do what we can to execute those plans to our desired outcome. But when plans don't go the way we expect them to, in some way we think we have failed--was it something that we did wrong? or didn't do right? I can tell you firsthand that my life hasn't met any of my expectations. And, while I have definitely had my disappointing moments, when I look at the overall outcome, my life has far exceeded my expectations.

So, my expectations are out the window and have been replaced by my new friends, hope and faith. Hope and faith that each day I can wake up and find miracles and blessings in even the small things; that the plans I have for my life will become reality-and that if they don't, and I am living the best I can, everything will work out the way God has intended. It's interesting what can happen when you give up on expectations and simply believe that God is in control and that what comes into our lives is even better than any expectation we could have imagined. Life just seems better that way. And lately its been great; greater than I could have expected.

Grateful, Soapbox, and Faith

I have much to be grateful for. Something I have realized time and time again in the last few months is just how blessed I am. Even amidst the trials, my Heavenly Father is so aware of what I'm going through, and what my needs are. He's never left me alone, no matter how much I might feel that way at times, and always uses every experience I go through to teach me more about His ways and how I can come closer to Him. I continually learn just how little I do know, but just how much He really does love me and wants me to grow and improve continually. I am so undeserving of all that He has given me; I am so flawed and have so many things that I need to continually improve upon, yet He loves me and continues to bless me. I would love to be married and having a family, however, he has blessed me with more time to myself. So, I look forward to enjoying it to the fullest, and utilizing this time the best I can.

I was reading in Ether the other day, chapter 12. Such a great chapter on faith! As I read it I realized just how much this time of my life is that "trial of my faith". So many things around me and recent experiences would make me believe that the things I really want to enjoy in life, like marriage for example, are impossible.

SOAPBOX: Everywhere I go, I continually cease to be impressed by the men that I meet. I don't think I have unrealistic expectations either. I am simply looking for honorable priesthood holders, who are respectful of others, magnifies their calling, and are goal oriented, ambitious and hardworking. It seems like a lot of the guys I meet simply just don't care. They don't care about educating themselves, they work dead end jobs, and just like to "hang out" and "play" with their friends, and they have no intentions of seeking marriage any time soon. I don't see a lot of these guys taking their priesthood duties seriously, almost treating it as a formality instead of the important responsibility that it truly is. It can be a little discouraging. Now this isn't to say that there aren't any good ones out there, its just that its been a while since I've found one, and even then it just didn't work out...anyway, end of soapbox...

The evidence is against me, and Satan thrives off me getting discouraged and losing hope. Yet I need to have the faith that the Lord can make anything happen. So even facing the facts, I must continue in faith, hoping and believing that with the Lord all things are possible, even when they are seemingly impossible.

Ether 12:6 "...I would show unto the world that faith is things which are hoped for and not seen; wherefore, dispute not because ye see not, for ye receive no witness until after the trial of your faith. "

So, I must continue to hope and hold on, disputing not. Someday I will receive a witness of the trial of my faith. Someday a miracle will truly happen and I will find that guy and it will be right in every way. I believe that. I now must enjoy the time I have until he comes along. I look forward to that time, but I am living it up while I can, enjoying this blessing as much as I can, trying to not forget the eternal perspective.

So I took this assessment back in January. It's the Clifton StrengthsFinder and it tells you your top 5 strengths. I just came across the results recently and I found it to be pretty interesting. House, Moving, and Me.

So, I realize that I need to update and since I feel the need to procrastinate, I thought I would take a second to blog. If any of you are familiar with facebook and ever happen to pay attention to my wall posts/status's, you would notice that a lot of them have been quite contradictory lately. So, I thought I should clarify:

I am Moving?: Yes I am moving this weekend. I should be packing right now, but alas I am procrastinating.

Are you moving into your House?: No I did not get a house. My roommate Kim actually bought a house and so I am going to be moving in with her until I find something. I had put an offer on a short sale a few houses down from Kim's, however I waited two months to find out that the bank denied the offer. So, I put a higher offer on the house and am waiting to hear back, but not holding my breath. I am just going to keep looking.

Some would say that would be frustrating, and in some way it is. However, I have found myself in a completely different place in the last month. The beginning of this year did not start out as I had planned and has had its ups and downs since then. There were moments that were so hard, sometimes I didn't know how to go on. However, the whole experience has been something I wouldn't trade for the world. I have learned so much about myself, my faith has grown in ways I never thought possible, and I have a whole new level of understanding about who I am and how God's hand has worked in my life. I look back at who I was back then and can't believe the transformation that has taken place. I think if that old me were going through what's been going on lately, I would probably be freaking out, stressing, and worried. But that attitude didn't work for me then and for the past 27 years, so I've chucked it out the window and have adopted a whole new outlook on life.

Sometimes there are things I want that lie outside my control, like this house for example. I can only control so much and then I have to just let life happen. I know that if I am keeping the commandments, and doing the things that God would have me do, He is bound to bless me. That is what he takes pride in. His work and His glory is to bring to pass the immortality and eternal life of man. So why wouldn't everything that happens in my life be for my good if I am doing what is right? Even if it's not what I would like, or if I don't get this house, its got to be for my good in some way, eventually. There is always something better out there. I've heard it time and time again, but for the first time in my life I truly believe it, feel it and know it, and am puting all of my faith in the Lord. I'm done trying to control my life and the things that happen, and have given everything to the one who has all control. Sure, I still make choices and move forward, but I know that if things don't work out, God has something better in store. I am now seeing the blessings behind the things witheld and it's amazing and overwhelming to see and know just how much God really does love me..

That was a much longer explanation than I had expected...but I hope you get the point. God is great. I am so incredibly blessed, more than I could ever imagine. Even the bad things are good and life is wonderful!!

Boils and Break-ups?

Okay, so I'm seeing a weird correlation... Back in January when Stan and I broke up, I got this huge boil like appendage on my cheek. It seriously looked like a second mouth (gross). It was there for quite some time too and even left a little scar (blast!). Well, Mike and I just broke up on Wednesday night (long story, short relationship) and I woke up yesterday with another huge boil on my cheek about 2 inches above where the other one was. What? I don't get it. Why is it that when I break up with someone my face decides to create small volcanos to decorate my cheeks? I don't know that my face can take any more break ups because it's just not pretty.

Overdue Update

Hi all! So, I know it's been a while since I've updated my blog. My apologies. I've been getting hassled for not updating my blog so this is my lame attempt to give a brief overview. Much has taken place in the last month or so, and I am sure that there is much more to come in the next few months. Here is a brief update of the happenings in my life: (pictures to come)

1. IRELAND: My sister Whitney and I took an impromtu trip to Ireland for my birthday at the beginning of April. We traveled the country for 6 days staying in B&B's, a 4 star hotel and a 5 star castle. We toured cities, towns and countries, trying to get in as much as we could. Unfortunately we failed to see everything we wanted to, and someday will have to make a return visit. It was an amazing trip and one much needed. I didn't realize just how much I needed it until I returned home.

2. DECISIONS: In the course of the past few months I have had a lot of time to reflect on my life and re-evaluate what exactly I am doing with it. Basically, to sum it up, I haven't really been doing much with it. I moved here to Phx from Cali over a year ago, just waiting for life to happen and not really taking any big strides to make things happen. So, in making some changes I decided to actually do something about my circumstances and take advantage of the opportunities before me. Instead of wishing and planning around life events that I have come to conclude I have no control over the timing of, I have decided to move forward with my life, and enjoy this time I have of being single.

A. SCHOOL: I have decided that while working at the University of Phoenix, I have the priveledge of enjoying the benefits of a free education. So, I decided to enroll in the Masters of Community Counseling program. I start class on May 27th. It's a 3.5 year program, so it looks like I will be making AZ my home for quite a while. Therefore I have decided to...

B. ...BUY A HOUSE: I don't see a point in throwing my money away at rent, so I am currently in the process of buying a house. I have a couple of offers down on some short sale properties, and am continuing to search and keep my options open. This is the time to buy, and my goal is to have everything taken care of by the end of the summer. My roommate just got a house and so we'll be moving out in a month and if all goes as planned, and I get the house I want, we will actually end up being neighbors! So, keep your fingers crossed :)

So, that's the latest scoop folks. I will try and update more as school starts, and when I finally get my house. I am hoping to have it by June, but we'll see... Thanks for tuning in, and thanks for all your love and support.

Infestation!!!!

So for months now our backyard has slowly been accumulating these green plants that some like to call "weeds." Kim liked to call them "pretty", but knowing how much Uncle James would be all over me for noth having them eliminated, I liked to call them "infestation". I'd been wanting to go out and pick them almost every chance I got but it was very rare that I had time to do that. And with the rate that these things were growing, I couldn't keep up on my own. While Kim thought they made our yard look pretty (because they were green in contrast to all the rocks), I knew they needed to be pulled or Uncle James would be on me like "white on rice". So, this last weekend, I thought I would enlist the help of our good friend Andrew, and Kathy, to help eliminate the greenage. It was a good thing too; due to the high volumes of weeds, consequently there were high volumes of gnats infultrating our yard, and house. It had gotten to a point that Kathy and I couldn't even park in the garage without inviting swarms of gnats to make home inside our garage.

Kathy and I thought we were fully prepared to take on the little buggers (bugs and weeds), but I really don't think we had any idea it was going to be that bad. We doused ourselves in "OFF", sported the sunglasses for eye protection, and bought a huge jug of bug spray. The bugs had infested some cardboard boxes that had been left out by our garbage, and we had the luxury of breaking them down while being surrounded by gnats. They were EVERYWHERE! And I swear no matter how hard we worked to get them dead, I swear that they just kept coming back. They were covering the side of our house, and even going up into the roof and vents. I think a few times I gagged.

Anyway, once we got the boxes taken care of, and hosed down the house, we thought we had finished our gnat dealings. Little did we know that weeds are the breeding ground for gnats, and again we found ourselves in a cloud of them as we helped Andrew pull weeds. We didn't get every single weed pulled, but we did get the majority. I think we filled 8 or 9 big large black HEFTY bags with weeds. By the end of the day, we were beat. Very grateful to Andrew for his help and sacrifice on a nice Saturday afternoon. So, we enjoyed a nice late lunch of chicken sandwiches, hummis, and other tasty treats. It was a day to remember...or blog about at least.
